CANNING FRUIT.

First—Can the fruit the same day it is
gathered. More than ha'f the secret of hav
ing fioe preserved fruit lies io this simple di
rection.
Second—Never csn fruit without adding as
much sugar to it as you would to prepare it
for the fable. This is imperative, else your
fruit will inevitably be leatht ry ; cook it in
I should say at the rale of one-quarter of a
pound to every pound of ft uit. at least ; but
taste and try, as I did, and when it suits y ui
palate cease from alt saccharine matter.
And now for the modus operandi : Pare
•ad extract the pit ; cut into halves and j
plunge into cold water until ready to Cook, I
else your peaches will be black; this, of j
course, does not apply to other kinds of fruit. 1
Place your cans in any vessel where they can :
stand at least half way up in boiling hot wa- j
ter, which keeps so until sealed. I usually i
take a large dripping pan and put it on the j
top of the stova at one side, while my pre
serving kettle is or the other. Make your
syrup and when it comee to a boil, put in
your peaches and let (it cling-) until you
can pierce with a piece of brootn corn : if
freestones, when the syrup boils up over 1
them the first time, skim out and put into '
the cans. When the latter are lull of the
peaches, fill up with boiling hot syrup, wipe
otf the tops with a rag wet with cold water •
being careful that no juice remains on them,
put on the covers, remove from the water to
the stove hearth and seal.
How TO KEEP POTATOES. —A correspon
dent of the Scientific American says that
he has tried the following method of keeping
potatoes for years with Complete success,tho'
in some instances the tubers were diseased
when taken from the ground : "Dust over
the floor of the bin with lime, and put in
about six or seven inches of potatoesand dus 1
with lime as before. Put in six or seven in
ches of potatoes and lime again ; repeat the
operation until all are stored away. One
bushel of lime will do for f< rty bushels of po
Utoes, though more will not hurt them—the
lime rather improving the flavor than other
wiae.
CLEANING MARBLE. —lt may be of some
value tQ house keepers who have marble top
furniture ; to know that a cotnmcn solution
of gum arabic is an excellent absorbent and
will remove dirt etc, from marble.
First brush the dust off the piece to be
cleaned, then apply with a brush a good coat
of gum arabic, ajout the consistency of thick
office mucilage, expose to the sun or dry
Wind, or both. In a short time it cracks and
and peels off. If all the gum should not p.-el
off*, wash it with clean water and a clean
cloth. Of course if the first application does
not have the desired effect it should be ap
plied again Cor. Scientific Americun.
PEPPER 'EM. —Those who are so unfortu
nate as to be troubled with bed-bugs about
their bouses, may find a remedy in the fol
lowing recipe winch a lady sent to an ex
change :—Add a quarter pound of Cayenne
pepper to a pailful of boiling watt r, let stand
and aettle, when it is ready to serve. FOl
papering walls, mix the same with tkur paste
aqd tho bugs will not nest under tbe paper.
In warm weather it is almost impassible to
prevent sinus becoming foul, unless some
chemical preparation is used. One pound
of copperas dissolved in lour gallons of water
poured over a sink three or four times, will
completely destroy the offensive odor. As a
disinfecting agent, to scatter around premises
infected with any unpleasant odor, it i* an
Bounced (hat nothing is better than a mixture
of fur parts dry ground plaster of Paris to
one part of fine charcoal by weight. Ail sorts
of glass vessels and other uleus'. s may be ef
fectually purified from offensive smells by
rinsing them with charcoal powder after ihe
grosser impurities have been scoured off with
•and and soap.
SOMETHING New.— A neighbor of mine had
a very rough cellar bottom and did not warn
to go to the expense of tlie cement, so he
took his coal ashes and mixed it with water,
to an ordinary thickness of mortar. It does
not mattet how many lumps of stones there
are. Put on about four inches thick ; let it
lie twenty fout hours, then stamp it with a
heavy btlckofwood three or four times a
day, until it is pcrfecily hard. It is belter
than cement, a it will not crack or scale off.

DRINKING AT MEALS. —When fat meals or
•auces composed partly ol butter are taken,
and cold dunk right after, the butter and lai
are rendered concrete and reparated from the
rest of the ailment. This congregated oily
matter, being lighter than ihe remaining con
tents of the stomach, swims on t> p of tin- f,„,i!
often causing heavy .uneasy, painful a n-alioii
about the cardta and breat, and som-times a
feeling of scaldiDg and anxiety. At other
Lines', when theatnmach regains its heat,the
fatter matter is rejected by little and little,
from weak stomachs, in oily repurgition,
which is very diasagreeable. In such case, a
little compound of hartshorn, wnh a glass of
warm water and sugar, will convert the fat
into soap ana afford instant relief.—Sir James

PRESERVATION OF EGGS.— Le Better ( a
Parisian paper) re commends, the following
method for the preservation of Eggs :
Dissolve four ounces of beeswax in eight
ounces of warm olive oil, in this put the tip
of the finger and annoint the egg all over.
The oil will inimi diately be absorbed by the
shell, and tbe pores filled up with wax. If
kept in a coo! place, the eggs after two years
will be as good as if fresh laid.
