Boiled Caitlifloweh. Pick oft' the
outside leaves ; cat the stalk close to the

hour ; if very large, quarter it ; put it
in boiling water ; suit a little ; oook un
til tender ; drain well ; place it on a hot
dish ; pour over it plenty of drawn but
ter ; removo it from the water as soon as
it i done ; serve quickly ; it darkens
while standing.

pound turkey carefully euough not to
break the entrails, so that you will not
have to spoil its flavor by washing it ;
singe it, and wipe it with a clean, damn
cloth, stuff it with about a pound of stale
bread, seasoned with salt, pepper and
herbs, sew it up, tie it in shape, lay it
in a baking pan wi h one quart of peeled
potatoes, and pu. it iu a hot oveu ; w

baste it witli the drippings from it ; and
put it back in the own ; baste it every
fifteen minutes until it ia done, which

Thou put it on a dish, with the potatoes
around it, and set it in the mouth of the
oven to keep it hot while you make the
gravy ; do this by pouring a pint of I oil
iug water into the drippiug pan, letting
it come to boil, aul stirring into it a
tablespoouful of flour mixed smoothly
in half a teacupfnl of cold water ; season
it to taste with salt and pepper, and dish

Queen or Pt DDivos. Soak a pint of
bread crumbs in boiling milk, add the
yelks of four egss, well beateu, and
sugar to tusto. Rake in a pie-dish ;
when cold, spread jam over the top, and
over that the whites of four eggs, beaten
to a stiff froth, with four tablespoonfuls of
white sugar ; put into the oven, aud
bake a very light brown. Flavor with
essence of vanilla or lemon.

rote records the results of experiments
conducted by M. Ville at Vmcennes,
which will interest all grape growers,
nnd which 'show conclusively that the
use on vines of wood ashes which con
tain much potash is justified by both
theory and practice. A number of vines
were planted under like conditions, ench
iu a separate plot, divided from its fel
lows by u pathway rather more than
three feet iu width (one metre). The
whole area covered was a hundred square
metres, each square metre biting planted
with oue variety of vine only, each plant
thus being at a distance of oue metre
from its fellows. Each square plot le
ceived every year the same treatment
except ns to manure.
One plot was treated with the com
plete manure, while from each of the
others was successively eliminated one
of the constituent elements of the
manure in question. Thus, while the
one plot received the complete manure,
nitrogeu was taken from the second,
phosphates from the third, potash from
the fourth, lime from tho fifth, and one
the plots was kit without manure of !

The result is sugiijiently striking, but
tho experiments also showed that where
the pota.-h was applied f.nd the other
elements sueeepsively eliminated, the
growth of tho vine aud the yield of the
crop presented uo sensible difference
a circumstance showing that potash is
iudi-tpemable to the vine. Other sub
Btauces may be omitted, and yet the vine
may flourish, but if the potash be
.omitted the vii e simply exitts without
producing a crop, so thufc after thirteen

grapes, but scarcely any lt-ave. aud
those leaves so weak 03 not to be a bit. to
resit the action oi the wind or xposure

A Telephone In the Mines.
The V.rginia City (Nev.) JMerprinc
of a late date says: The telephone was
yesterday afternoon put into the Con
solidated Virginia mine, and was found
to work to perfection. An instrument
has been placed on tho l,fr.l) level, from
which a wire is carried up the shaft and
ont to an instrument in tho private
ofllce, a short d stance south of the main
building. A number of persons, princi
pally thoso connected with the mine,
were present, when the tent were made.
Colonel Fair, who was above in the
ofllce, leceived the first message from
tho depth". It was from one of tho
gentlemen engaged in putting up the
instrument, and was as follows; ' Col
onel Fair, allow me to congratulate you
upon tho introduction of the telephone
into the 1,550 level of the C.)inoli ated
Virginia mine."
Colonel Fair made s me su t ible re
ply, and then, having an eye to tho prac
tical, calh d ont: " Is Hugh Lamb (the
foreman of the mine) dowu there ?"
Tho telephone said "No."
Hugh Lamb was among those present,
however, bnt the man of the telephone
had not vet got the man aud tho name
connected. Hugh heard the call from
above aud answered back: "lam here,
staunch and true 1" or something to that
effect.
"Ah, there yoit are, Hugh, I know
your voice," said Colonel Fair.
Then followed all kinds of mining
slang about winzes, sumps, giraffes,
slopes, lagging, pluugers, clacks, don
keys and such little notions.
A wire will be probably run to the C.
and C. shaft, and eventually, no doubt,
from the Consolidated Virginia ofllce
through the Gould and Curry, Savage,
Hale and Norcross, and all other mines
in which Colonel Fair is interested.
A number of very successful and in
teresting experiments were mode with
tho instrument night before last ou the
surface. An instrument was placed in
the Washoe Club room and wires carried
to distant parts of the town, wheu those
iu the club room listened to piano-playing
and singing, and conversed with
ladies and gentlemen far away.
We shall doubtless, from the present
start, soon see telephones in all our lead
ing miues. It will eavo much ruuning
up and down of cages, at considerable
cost, in the carrying of messages between
ths surface and the lower levels.
Horrible Affair ut a Reformatory.

have been made in tho Reformatory for
Native lioys, which is situated on a hi 1
about nine miles from Kingston in the
Island of Jamaica. Some time ago,
under the governorship of Sir William
Grey, n clergyman was appointed super
intendent of the reformatory, with a
salary of 100 a year, beside a house
and other perquisites. But these appear
not to have been suflicieDt for the rev-
ereued gentleman, who applied tho foul
allotted for the four hundred poor boys
under his charge to fatteuing pigs for tho
market. Meanwhile the. little wretches
were starved aud growing desperate
they actually fought with tho pigs for
the food thrown to then. The miserable
creatures were neglected in every possi
ble way. A nasty insect, colled a tick,
well known to every traveler in the
tropics, bnrrowed into their feet, and, as
the doctor had to look after his privato
patients, the wounds, which if examined
in time would have been trifling, became
so serious that amputation o toes or
feet were necessary in no less than eighty
cases. Starved nnd neglected, the lads
became unrulv. The offenders were
then shackled together iu pairs and con

light by mere accident. The bovs were
entrusted with knives ti cut dowu some
j guinea grass outside, iu charge of one
warder only; tuey naturally useti uieir
liberty to satisfy the cravings of hunger
by plundering tho neighboring garden?.
The owners did not dare to interfere,
but reported the matter to the governor.
This led to investigation ami reform,
and we understand that L'ird Carnarvon
has, i-i a strongly worded despatch, de
nounced this horrible affair as a disgrace
to the calony anl t tha whole govern

mans are digging at Olyrapia, and they

the foundations of the ancient temple of

of the sacred enclosure in which tho
Olympic games were celebrated. As
yet they have not dug up any of the
fragments of the ivory and gold statue
of Jove, by Phidias. Tho French are
excavating at DjIoh, Jhe birthplace of
, Apolla and Diana, and the treasure
! hold of ancient Grce. e. They have al
I ready laid bare considerable remains of
j the temple of Apollo, built in the 130th
i Olympiad, and wh kuiws i ' they may
j unearth some of the hidden treasures ol
the confederated states of antiquity, und
