Curing Hams.
Tor pickling hams make a brine just
etrong enough to barely float an egg or
a potato. Into this stir in sugar or mo
litMsea enough to give it a slightly Bei t
ih taste. The following proportions will
found about right for one hundred
pounds of ham : Six gallons of water,
eight pound of eilt, three pounda of
brown siiifaraJ 1 three ounces of saltpe
tre. Dissolve the saltpetre thoroughly
before adding it to the pickle. Cover the
hama entirely with this pickle, tiold theru
lown with a tUt stone and let the pack
.e stand where the temperature is uni
form and above freezing. For hams of
twelve pounds or less four weeks will be
autfieient, but larger hama should re
main in the brine longer. In a moderate
and moist atmosphere meat will "take
jult" much fitter than in a dry cold one.

week embraces the extremes of time n
qoired for domestic curing of hams', vary
ing as to the f of the hams state of the
Htiiiosphere and time when il iaantici
patedthey will be used.

Iry salting is done by rubbing each ham
half dozen times, at intervals of a few
days, with salt and sugar, and bunching
