To Make Corn Oysters. -I take three do-

Have ready in a frying pan, a sufficient

gether. Set it over the fire till it has boiled
hot, and then put in portions of the corn
mixture, so as to form oval cakes about three
inches long, and nearly an inch thick. Fry
them brown, and send them to table hot. In
taste they will be found to have a singular
resemblance to fried oysters, and universally
liked if properly done. They make nice side
dishes at dinner, and are very good at break
fast. Farmer and Mechanic.

To Male Good Apple Jelly. Toko apples
Of the best quality and good flavor, fuot
sweet, cut them in quarters or slices, and
stew them till soft ; then strain out the juice,
being very careful not to let anv of the pulp
go through the strainer. Boil It to the con
sistency of molasses, then weigh it and add
as many pounds of crushed sugar, stirring it
constantly till the sugar is dissolved. Add
one ounce of extract of lemon to every twen
ty pounds of jelly, and when cold, set It away
in close iars. It will keep good for years.
I bose who have not made jelly in this way
will do well to try it ; they will find it super'
or to currant jelly .Michigan Farmer.
Temperance Vinegar. I took watermelons'
scraped off the pulp, strained it through a
thick cloth, and boiled it down one-half, or as
old cidor boilers would say, two to one j put
Jt in a cask, aud three weeks I bad most ex
cellent vinegar j and it has contiuued to im
prove with age. Those who are accustomed
to use all kmds of vinegar, and a great deal
or it, say it is the best they ever saw ; but if
any of your readers know of any better cheap
er, or safer way to manufacture the article. J

Gentlemen : We take much pleasure in re
commendingvour Salamander Safes to Merchants
and others in want of a secure means of preser
ving their books, papers, etc., from fire, as the
one we purchased from you about seven months
since has preserved our books, papers and cash
in as good a condition as they were when put
into it, before the great fire of this morning, which
destroyed the entire block of buildings corner of
Chestnut and Fifth streets. 1 he above safe was
in use in our office, on the second floor of our
building, from which place it fell into the cellar,
and remained there until the fire was out The
Safe was then removed and opened in the pres
ence of at least 1 000 persons, who witnessed the
good condition of tho contents. Will you please
have the Safe and Locks repaired, as wo intend
to put it in use again, having perfect confidence
m its lire-proof qualities.
