and prepare for the mill than a large one.
— On the 20th of October, inst., I cut half my '
/ Ehee., it having the night previous got a smart

/ ' frost, ' tilt the blades Were killed, on the follow
ing
day I had the remaining halt cut, it having
got !welded:l freezing. We then hauled it in
/and set it on end in the barn, that which got one
nights free sing 011 one side of-the barn, and that
which got 1, , w0 nights freezing on the other side
In a solid mass, there it remained for some time
till I got my mill ready for operation which was
some time after the cane was out. My mill
which I built myself consists of three rollers
turned out of a whiteoak but 10 inches in dim
- ,eter and 18 inches long, set in a housing of four
inch oak plank, the driving roller has two rows
of Cogs, one at bottom and ono at top, the other
two rollers have mortices corresponding with
- •the Cogs, the rollers stand perpendicularly, the
driving roller runs through and three feet above
the cap on which is placed a sweep to attach a
horse to. The mill is set in two sills five feet
long and I loot square which makes it heavy
enough to remain stationary when in operation.
The mill finished, I now commence crushing the:.
cane and my little wooden mill which took me
about ono week to build far exceeded my anti
cipations From every well grown stalk it
pressed over a pint of juice. I have triedvarious
ways of manufacturing the juice into syrup, I
have taken the juice from the press just es it
came from the cane, put in pots when it began
to boil, put iu a little lime, mixed to the comae
teney,of thick cream whioh caused a thick scum
tarise to the top, this removed continued to boil
down one half,remove the pot from the fire, let
it settle, strain it, put it over the fire when it
comes to the boil,-stir in the whi4e of one egg
mixed with half a gill sweet milk to four gallons,
boil doWn till thick-enough. list I think, the
better way is tt .r i. try my other mode, which is
'this I set abe el on a block convenient to the
mill, (an open ended barrel). put a spite above
the bottom hoes which will leave threo inches

put the juice, lethen the barrel is filled let it
stand over nig h t, by morning all the sediment
will be settled t the bottom of the barrel, from
this spite draw he juice, strain into a pot, put,
it over the fire, dd one table spoonful of baking I

soda to five gallons of juice, stir it well for a few
seconds,•boil down two-thirds, to three gallons,
. thus reduced, add one egg beat up in a gill of
sweet mill:, stirring it at the time so as to have
it well mixed, remove it from the fire, let it
stand thirty minutes, strain a second time, put
, it over the fire and boil till thick enough, thus
was the sample mode I send you.
Some of my cane remained eight days in the'
barn before it was crushed, and although it was
'. .•• in a solid body it did not appear to lose any of
its ' ' jury quality, neither did it heat, but the
' -• • ' -^.‘ syrnpls not all that we get for our labor, the
',..• :'. airtished stalk makes an excellent feed for hogs,
• - ' when cut up and mixed with a little bran it makes
