If yop fall to nil your butter at the highest market price, you maybe .certain that it, is not of the best quality, and , that the fault is all in the making. There are s few simple rules, which, if_ followed strictly, will insure good, batter and fair prlces,--the first, and must important of which is perfect cleanliness- in every stage of the-process of making. Wiih out this, all other conditions will be fulfilled in vain. 1. Your milk pails, pans, cream pot and churn, must be washed perfectly clean every . time they are emptied, and then - thoroughly rinsed in boiling kcit water, wiped with a clean towel and dried in the sun and fresh air. 2. Before milking, brush the cow's bss; tp. fore you set the pale under, and .get ti the -loose, fine hairs, which will otherwise fail ;U- V) the milk.; and if the teats or beg are dirt', .wash them clean with cold water; 3. Set your milk in; a cool, airy place,-where it will be secure from smoke, soot, E.511C8, dust and flies, and take off the cream before it turns to clabber. To get all:the cream b., ; . fore the milk turns, it is an* eFellent plan to set the pada Into kettles over the fire'N't WI a little water in them, and heat the milk nearly to the boiling point, and stir it before strain ing. By this means you will get all the cream in twelve hours, perfectly sweet and free frora lumps of clabber. 4. Every time you add fresh cream to the churning, stir the whole well together, and keep the cream excluded from all manner ot dirt and foul or hot air. 6. When churned, work the buttermilk thor. oughly out of it. THINNING Faun CRGPS.—We once heard a successful raiser and marketer of peaches say that by thinning the crop to about one-third. or one-fourth its ordinary numbers on loaded trees, he was able to obtain as many bushels as before, on account of the increased size, and to obtain triple price. During an abundant nation, his neighbors, who neglect. ed thinning, found it difficult to get lilty cents per bushel, while he sold all his readily at a dollar and a - half. All trees . that over bear and all that have defective fruit, .eitlicr from the attacks of insects, or otherwise, wiil be much improved in the quality of, their crops by timely thinning—remembering al ways to pick off' the poorest .specimens leave the best. Even the apple crop, whiLlt is cheaper and more abundant than must others, should not be neglected. If any i.ne who doubts will remember fora moment that an overloaded tree has to. be, finally picked by hand, he will seethe propriety of doing a part of his picking so early in the season that the portion left may be improved by the op.:. ration. Suppose, for example, that a tree has at the present moment three thciusand groa leg apples, upon it, and that two thousand are small or scabby, 'or infested with the apple worm or stung by the curculio.. allows - these three thousand all to grow, they will crowd each other, snd none of them will be large and fine flavored. 'As usually cultivated, it Is of little use, to plant plum trees. The young plums all fall a prey to the curculio. This is the experience of all who plant a few trees. And but few persons plant more than five or six or eight or :ten trees—they think these will afford enough fruit for the family. But the family never see any of the ripe plums.. The cumuli° wants all these few trees produce: Now there is a secret about plum raising. We have discovered it in traveling over the country. We never visited a large plum or- • chard in all our life that we did not fled plen ty of fruit. And we never visited any place with only eight or ten trees and found, a good crop of this fruit. Now these facts set us to thinking, and the result of our thoughts is this ; that it is'very easy to have all the plums yon want to eat and sell. The secret connected with plum raising is to plant plenty of trees, • . so as to give fruit to the cumuli° and to your self also. -If, youwill plant fifty or a hundred or two hunched trees, you will have fruit enough for everybody. Every such orchard that we even visited had plenty of ripe fruit. Some (Wert complained that the cumuli° did not thin out the fruit enough—that the - trees were overloaded. - So we say to our readers, if you plant plums at all, plant fifty or one hundred trees,- then yon will bemire to have all the fruit 3,•tat want..
