These ingredients .having been Well mixed

and • a large spoonful -of, pulverized . sugar,
with a-few drops a lemon, were now.tnixed
in astotlu'r vessel. The contents Of both ves
sels were then thotonghly tui:t - ed tegelher,
and, poured into 'the little pans, which w-re
placed in the oven until cooked. ' On being
w bit:lt-awn from the oven and cooled, the,
following preparation was used to ornament
'them, the tarts being. afterward replaced in
the oven to harden :. . •

very hot, and the articles • likely -to burn, a'
piece of paper should be"placed over them.
' The Meringues having been in the oven Un
til the outside surface was perfectly hard-
Cued, the cook withdrew ,the pan. ant' taking
up.in her hand each little white lump. turned
it bottom upward. Taking a spoon she press
ed it into the bottom Of each article: The
hollow ibis fonaed was then filled- with a
mixture composed . of the cream skitrened
from a quart of milk, which, .:with.suffiCieet
pulverized sugar, was, beaten to a frOth..The
white hinips were 'sleek together "in pairs;
the centre of each finished Meringue was thus
filled with a creamy froth... and when the
'w hole operation vas .concluded,, a batch of
these lukuries lay tin a- platter nrefi'lred
the table:— The icing. not required for the
manufacture of the Meringues. was used to
ornament oPker articles of pastry; the 'process
being simple. A Small piece of letter paper
having - been-fashioned into a fUnnel, it was
filled with the icing; which, peredlating •
through a small htile left in one end of: the
funnel; could be readily peased,over the puts
try Minty desireciform or quantity. . •

or, preserves - could be substituted for this
