It is a well conceded fact that there if
..a great advantage in improved stock
horses, cattle, ebeep, and lings. A thor
rUh,, progressive farmer aims to secure
and propagate these. If we examine the
. various reports, we will learn that poul-
try is a great interest in this country ;
and to secure the most profit on this
r pecies of farm stock, our farmers should
obtain improved varieties. Instead of
1 bringing to market long-legged, small
tiodied chickens, of the chile-poke modrl,
weighing, say, two pomxls, they should

ing four or six pounds, and these should

the idea that it injures tl.e leather.
One ounce of aloes to one gallon of
oil will prevent rats from destroying har

a small quantity, say a tablespoouful of
pine tar to one quart of oil, the harness
will be most effectually protected from
injury ; but if too much is put on, the
leather will not absorb it. It will col-

POTATOES AM) IiEA.NS.
Of all edible roots the potato stands at
the head. It is especially useful to eat
wilh lean meat to which it stands in the
relation of fat or emboli. Meat and po
tatoes together constitute about the ali
ment as bread, ou which alone, it is well
known, mau can live longer than on auy
other food.
Potatoes, when used with oat meal,
peas and beans, supply all the muscle
making elements required for the labor
ing man the three latter auswering in
stead ot meat.
All old California miners will recollect
the eiceeding great relish with which
beans were eaten in 1849 and '00, before
beef was plenty iu the mines. They
formed, with most, the chief staple oi
food. The miners of those days could
scarcely have stood up under the hard
work aud exposure to which they were
necessitated, if it bad Lot been for their
been diet. It was thence they derived
the nitrogen or muscle-making food ordi
narily obtained from a meat riiet.
The potato is almost entirely devoid of
muscle or brian food all that it does con
taiu is found in the " eyes" or germs, and
they, especially in old tubes, are gener
ally cut out out by the fastidious cook.
