The Dispiad Dives the following sccount
of a,few of the thing which ihe people of
New York city are in the-baba of taking , in
to their aistems, under. the name of food and
Ariiik. A perusal will almost answer' as a
substitute far.an emetic:
We live - on distillery-slop' fed," bloated
and diseased beef, scrofulous and measly
< pork, putrid fish,' and milk that is little less
than whiskey dregs strained thro' the udders
of consumptive cows ; and even this article,
• called milk; is drugged with strychnine, con-,
tamed in the slops from 4,he • distilleir, and
after it is run throtigh the udder it is 'diluted
- With putrefied eggs to give it a - beautiful
cream color. Most animals that.ire smoth
ered from close confinement on their passage
to this city .go to the sausige mskers, and we
get : that delicious article, highly spiced, and
delicately flavored, in a variety of shapes and
forms.. "Bob" ,veal, or veal - weighing under
fourteen pounds'ikqual ter, bide and all, is
anotbet exquisite dish often served up in , a
variety of ways.. The process of &eking ran
cid lard, or the thing called fst, "skimmered
off the huge \ kettles used by of 'gatherers
and purchasers a hotel 'slops and garbage,
into butter, and then giving the_ article a rich
color with a little mineral pairs!, has grown

• and dealers in hotel swill and garbage„boil
up the mass in large kettles, skim off the fat,
- and fearthe rest to the hogs. They sell this
fat at frilm two to ten' cents a pound, and
' khow,much of the article is sold for Orange
County butter it is impossible to tell; but
`' the fact that many are . engaged in this busi
ness is =mistakable.' Last .year there was
, quite a demand forthis fat for- exportation,and for the man,ufaeture of lard 011, but the
. financial 'revulsion broke up some of the
heavy houses engaged - in, this business ' 'ad'

,uses for this fat, and one-of.the uses was' the 1

cows for a single day, churn it

144 butter it produces; and add to it 'fifty
