How to Drive Bats Away Without PoIhoii.
We know of two methods : First, tho
old French plan ; this is followed chiefly in
Paris, by men who make it a special busi
ness. They take a deep tub with water on
the bottom and a little elevation in the
middle like an island, on which is only
place for just ouo rat to sit on. The top is
covered and has a large balance valve,
opening downward. On the middle of this
valve a piece of.fiied pork or cheese is
placed, and when the rat walks on it to
get the cheese, the valve goes down, drops
the rat into the water and moves back in
position. A rond is made from the rat hole
to the top of the tub by means of pieces
of board rubbed with cheese, so as to make
the walk attractive for tho rats. In the
course of a night, some ten, twenty, or
even more rats may go down, and if the
island was not there, they would be found
most all alive in the morning quietly swim
ming around ; but the provision of the littlo
island saves the trouble of killing them,
because their egotistic instinct for preser
vation causes them to fight for the exclu
sive possession of tho island, on which, iu
the morning, the strongest rat is found in
solitary possession, nil the othors being
killed and drowned around him. Second.
the New York plan, invented by ono of our
friends. Tho floor near tho rat holo is cov
ered with a thin layer of a most caustio
potassa. When the rats walk on this it
makes their foot soro ; these they lick with
their tongues, which make their mouths
sore ; and tho result is that they shun this
locality not alone, but appear to tell all
the rats in the neighborhood about it, and
eventually tho bouse is entirely abandoned
by them, notwithstanding tho houses
around may bo full rats. Manvfacturer

Hard and Soft Water.
All housewives may not know how ma
terially the effects of hard and soft water
differ iu cooking of various vegetables ;
while one species of vegetables requires
hard or soft water, as the case may be,
another species becomes sensibly deterio
rated by it. For instance, peas and beans,
cooked in hard water, containing lime or
gypsum, will not boil tender, because those
substances harden vegetable caseine. In
soft water they boil tender, and lose a cer
tain raw, rank taste, which they retain in
hard water. Many vegetables (as onions)
boil nearly tasteless in soft water, because
Mil the flavor is dissolved out. The addition
of fialt often checks this, as in tho case of
onions, causing tho vegetables to retain
their peculiar flavoring principles, besides
much nutritious matter which might be
lost iu soft water. Thus it appears that
the salt hardens the water to a degree.
For extracting tho juices of the meat to
make a broth or soup, soft water, unsalted
and cold at first, is best, for it much more
readily penetrates the tissues ; but for boil
ing meats where the juices should be re
tained, hard water is preferable, and the
meat should be put in while it is boiling,
so as to seal up the pores at once.
Facts for Formf nt.
A series of experiments, instituted to
test the average loss in weight by drying,
shows that corn loses one-fifth, and wheat
one-fourteenth by the process. From this
statement it is clear that farmers will make
more by selling unshelled corn in tho full
at seventy-five cents than the following
summer at ouo dollar a bushel, and that
wheat at $1.83 iu December, is equal to
f 1.60 for the Bame wheat in June follow
ing. This estimate is made on tlie basis of
Interest at 7 per cent., and takes no ac
count of loss by vermin. Theso facts are
worthy of consideration.
Rolled Jelly Cake.
Ouo cup of sugar, one tablesoouful of
butter, oue and a half cups of Hour, two-
thirds of a cup of milk, one egg, two tea
spoousful of baking powder, sifted with
the Hour. Hake in a large sheet, and when
lino, spread on the jelly, and cut the sheet
iu strips three or four Inches wide, and roll
If, instead of Jelly, a sauce is made and
spread between the layers of Uie cake, it
may be eaten as cream pie, and furnish a
very nice and easily prepared desert.
Sweet Potato Uuiis. t
Boil and mash two good sized potatoes
rub in as much flour as will make it like
bread ; add a little nutmeg aud ouo , table
spooufull of sugar, with a tablespoonful of
tood yeast. ' When it has risen, work in
two tabluHuoonsful of butter, softened so as
to be easily mixed thoroughly with the
dough : then form Into small rolls, and,
when raised the second time, bako oil tins,
a nice browu., Serve hot.- "
