Receipts for Curing Meat.
As "killing time" will soon be, bore we
republish the following .'valuable receipts
for curing meat. The first is tbe famous
Qermantown Telegraph receipt, which is
. used extensively throughout eastern Penn
sylvania. Its great merit consists in its
being not only an excellent preservative,
but the bams cured by this process have a
very rich flavor, and are not over-salted.
Germantoun Telegraph Receipt.
To one gallon of water,
Take 1 J lbs. of salt,
J lb. of sugar,
J oz. saltpetre,
J oz. of potash,
In this ratio the pickle can be increased
to any quantity desired. Let these be boil
ed together until all the dirt from the sugar
rises to the top and is skimmed off. Then
throw it into a tub to cool, and when cold,
pour it over beef or pork, to remain tbe
usual time, say four or five weeks. The
moat must be well covered with pickle and
should not be put down for at least two
days after killing, during which time it
should be slightly sprinkled with powdered
saltpetre, which removes all tbe surface-
blood, Ac, loaving tbe meat fresh and
clean. Borne omit boiling the picklo, and
And it to answer well, though the operation
of boiling purifies the pickle by throwing
off tbe dirt always to be found in salt and
sugar. '
If this receipt is properly tried, it will
never be abandoned. Thore is none that

The following four recipes are said to be
those after which tbe premium hams were
cured that gained a prize at the Maryland
State Fair:
First Premium. Mix two and one-half
pounds salpetre, finely powdered, one-half
bushel fine salt, three pounds brown sugar,
one-half gallon molasses. Hub the meat
with the mixture; pack with skin down.
Turn over once a week and add a little salt.
After being down three or four weeks, take
out, wash, and hang up two or throe weeks
until it is dry. . Then smoke with hickory
wood three or four weeks ; then bag or pack
away in a cool place (not a cellar) in chaff
or bay. Thomat Love. .
Second Premium. The meat, after be
ing cut out, must be rubbed, piece by piece
with very finely powdered saltpetre, on the
tlesh side, and where the leg is cut off a
table spoonful (not heaped) to each ham, a
dessert spoonful to each shoulder, and about
half that quautity to each middling and
jowl ; this must bo rubbed in. Then salt it
by packing a thiu coating of salt en the
flesh side of each piece, say oue-half an
inch thick ; pack the pieces on a scaffolding
or on a floor with strips of plank laid a few
inches apart all over it (that is, uuder the
meat); tbe pieces must be placed skin side
down, in tbe following order: First layers,
bams; second, shoulders; third, jowls; fourth
middling ; take tbe spare ribs out of the
middlings. The meat must lie In this wise
six weeks if the weather is mild ; eight if
cold, tbe brine being allowed to run freely.

Third Premium. Half bushel of fine
salt, three pounds of brown sugar, two and
one half pounds saltpetre, one-half gallon
best molasses. Mix these ingredients to
gether, then rub each piece well with the
mixture until all be absorbed. The meat
must be taken out of the pickle once a
week for six weeks ; the two first times the
meat is taken out, there is to be a plate of
alum salt added to tbe pickle. Jin. Wil

Fourth. Premium. Two and one-half
pounds saltpetre, dried and finely powder
ed, one-half bushel best Liverpool salt,
three pounds of brown sugar, and onohalf
gallon molasses. Mix all iu a vessel, rub
the meat well with same, and pack with
skin down. The above is the exact amount
required for 1,000 pounds of pork. After
being in salt three to four weeks, take out,
wash clean the pieces, dry,' and hang it up
for smoking. Three weeks is sufficient to
moke them thoroughly by fire mode of
hickory wood. . When smoked, take down
or pack away in dry chaff or cut straw.
Examine them occasionally, and if found
to be at all damp, renew the pocking with
dry material.
' Apple Meringue.
Pare, core and stew ten tart apples, in a
very little water ; season as for a pie, and
put it in a fruit pie dish, into a cool oven.
Beat up, meanwhile, the whites of four
eggs as you would for Icing: piling it on the
apple like rocks, or irregular, avoiding the
edge of dish. Return it to a warm oven,
and brown macaroni color. Blip all out
carefully, by aid of knife or spoon, into a
China dUb, and serve with cream, which
if you have not, make a custard of the yel
lows, flavoured wiUi'essenoe of Vanilla, &a.
Custard may be used instead of apple ; It
