FARM AND HOUSEHOLD ITEMS We intHle commtmcntfons trim nil pe.nontwhonrt tnterertetl in matters properly belonging to lliit Artificial Milk. From tlio repents in circulation it would seem as if science wcro about to make cows superfluous. Artiflcial milk has been prepared by a French chemist from sugar, dried whites of egjjs, carbonato of soda, olivc-oil, and water. By substi tuting gclatino for tho whites of eggs, and with less mlxturo of water, crenm is obtain ed. Another chemist, Gaudin, in discuss ing the preceding suggestion, gives his testimony as to depriving fats of all un pleasant odor by means of subjection loan appropriate temperature. IIu also states that very good artiflcial milk can be pre pared from bones rich in fat, by purifying this fat by means of superhcatod steam, And combining tho fat thus obtained with gelatine. This milk is, he says, almost like that of tho cow ; and when kept, ac quires first the odor of sour milk, then that of checso. The gelatino in it represents the CAsciue ; the fat, the buttor ; the sugar, the sugar of milk. It serves for tho prep aration of coflee and chocolate, of soups, and creams of excellent flavor, and its cost is but trifling. Hints on Housekeeping. We will give to intellect, and to all vir tues, tho honor that belongs to them, and still it may bo boldly aflirmed that econo my, taste, skill nnd neatness in tho kitchen, havo a great deal to do in making life hap py Bird prosperous. Nor is it indispensably necessary that a house should be filled with luxuries. Tho qu:ilillcations for all good housekeeping can bo displayed as well on a small scale as on a large one. Skillful oooking is as readily discovered in a nicely baked potato, or a rcspcctablo johnny cako, as in a nut brown sirloin, or a brace of canvas-backs. Tho charm of good house keeping is tho order or economy and tasto displayed in attention to little things, and these little things have a wonderful influ ence. A dirty kitchen and bad cooking have driven many a one from homo to seek for comfort and happiness somewhere else. 8oe to it, all ye who tiro mothers, that your daughters are all accomplished, by an ex perimental kuowledge of good housekeep ing. ,. Planting Potatoes. Dr. Hcxamer, of N. Y., gives a result of an'experiinentof planting tho potatoes in seventeen different ways, and found tho best results were given from one largo potato, whole, in each hill ; tho next best from two large half potatoes cut lengthwise; ncx tho seed end of a large potato; next from medium sized potato planted whole ; the smallest from small half potatoes. " A me dium potato he plants whole ; large ones cut in half and tho largest In four pieces, each lengthwise, always taking care to select his best and soundest potatoes for seed. J. T. Wardor, of Ohio, in an experi ment with Harrisons, found that largo seed out iu balvos givo tho most naloablo pota toes. IIo says: "This exporinieut, iu con nection with ono made last year, induce me to cut good sized potatoes for seed in pre ference to planting them whole ; ami in years of scarcity to uso smull potatoes, with care not to plant them too closely to gether." Artificial Mahogany. The surface is planed smooth, and the wood is then rubbed with a solution of oltrous acid ; one ounce of dragon's blood is dissolved iu nearly a pint of spirits of wine ; this, and one-third of an ounce of carbonate of soda, are then to be mixed to gether and filtered, and tho lquid In this thin stato is to be laid on with a soft brush. This process is to bo repeated, and in a short interval afterwards the wood posses ses the external appcaraco of mahogany. When the polish diminishes in brillluncy, it msy bo restored by the uso of a little cold drawn linseed oil. Hot Cakes. A griddle for baking cakes should never be greased, as apart from the auuoyanco caused by the smoke arising from a greas- od griddle, the delicate flavor of the cakes is destroyed. Scour well with a cloth and sand, wash with hot suds, wipe dry, and just before baking rub with a coarse cloth and suit. It is not necessary to wash and scour it every time it is wanted ; only once to get nil the grease out ; but use tho cloth and suit every time you put fresh cakes on, just as grease would le used. 12T A Raven,Olilo, paper, puts on record A now style of butter-making, stating that recently a lady residing iu that vicinity put about one quart of cream iu a cloth bag, and buried about two foet deep In the earth, where it remained three days, when she disintored it, and found it transformed Into punt, swout yellow buttor.with not ono drop of butter-milk to be seen. It is pre sented that the cream will yield about one third inore buttor by thin process than by the old-fashioned way of churning. THE ACE. 1872 Tho Lending Democratic Newspaper In Pennsylvania.
