A correspondent of the Independent, travelling in Sweden, was immensely de lighted with the coffee served on tho steamboats and hotels. " At Upsala," he writes, we determined to find out how they made such perfect coffee as wo had just drank, and stepped into tho neat kitchen of tho little hotel ; and this was the report: Take any kind of coffee-pot or urn, and suspend a bag made of felt or very heavy flannel, so long that it reaches the bottom, bound on a wire just fitting the top; put in tho fresh-ground pure coffee, and pour on freshly boiled water. The fluid filters through the bag, and may be used at once; needs no settling, and retains all its aroma. Tho advantage of this over the ordinary filter is its economy, as tho coffee stands and soaks out the strength, instead of merely letting the water pass through it. ' Do you boil it V then inquired the learner. ' Na-a-a-ay,' said the maid in simple astonishment that any one should bo so wasteful as to send the precious aroma away in steam, should rob that princo of food of that evanescent something which constitutes his nobility, and reduce him to a mere aliment. As soon would one think of throwing away that drop of sunshine, charged with all the summer's gold which lies at the throat of a bottle of Johannisberger." How to Break Colls to Lead. Take a piece of common size rope six or eight feet long : make a noose on one end large enough to slip easily into the colt's mouth. Then take the other end and pass it over his neck, through the noose on the under side of the mouth, and you aro ready to begin operations. Step around to one side of the animal a few feet off, and command him to movo j at the same time givo a sudden pull on the halter. Continue in this manner, giving a sudden pull sideways (but never forward) every time tho colt refuses to move, and gently pat him on tho neck when he obeys. 13y this method any colt can generally be broken to lead in a couple of hours ; after this any kind of halter can be used. A colt broken in this manner will not learn to pull back on the halter, as many do when the method of pulling forward on the halter and beat ing to make them lead, is resorted to, as is often done. Western Rural. Cabbages. A correspondent of tho New England Farmer says, if persons who have lost their cabbage by the caterpillar, which is tho offspring of the Yen's Bapac, will another year, after setting out their cab bages, keep them well sprinkled with a solution of blue vitriol and water a piece of vitriol as large as a walnut to a pail of water they will not bo troubled much with the worm. Hellebore answers very well in place of tho vitriol Care must be taken not to get the solution too strong, as it is poison. Liquid hen-manure is also very good. 'If correct this statement is impor tant: " The omnibus and street car com panies of New York city have found that a horse weighing 1,000 or 1,100 pounds is the most serviceable, and the best food for him is twelve pounds of hay a day, 15 pounds of corn meal, and two or threo pounds of salt in a month. Tho hay is cut, moistened, aud tho meal mixed with it. Twenty miles of travel a day is ex pected of him." ' Buckwheat griddle-cakes : Tho fine brown color so desirable on this fa vorite breakfast dish cannot bo obtained if we rely on buckwheat flour and water alone to furnish the batter, In order to secure this color milk should be used in stead of water and ia its absence wo should recommend tho addition of finely mashed potatoes. ; This mashed potato improves the flavor of the cakes and causes them to rise better. Spots on Carpets. A few drops of carbonate of ammonia in a small quantity of rain water will if carefully applied, remove stains from car pets, whether produced by acids or alka lies. Carpets injured by whitewash have been perfectly restored by this simple re ceipt. , When to Plant readies. An exchange has the following in an swer to an inquiry as to the best time to plant peach trees spring or fall : Our advice is to procure tho trees this fall and heel them in carefully, first pru ning every root, after heeling them in, take care that no trees or root3 lay across each other, but tliut tho earth touch every part of the root. Of course a dry place should bo selected for tho heeling in; the trees should have their tops to ward the south, and tho earth say ono foot deep over the roots, and four inches deep along on the bodies, two and a half or three feet towards their tops. As soon as tho ground will work clean in the spring, do tho plnnting out in the orchard, and then prune the tops as fust as planted, cutting them so that no tree bo over three feet out of the ground.
