How Flour is Made.
When a cargo of wheat arrive - at
the flouring mill it is first raised by
the elevator to the top of the kidd
ing and stored in the large bins,
which have a capacity of 100000
bushels.
From the bins the wheat is.diawn
• as wanted to the cleaning room,
where it. is .delivered up to the ten
der mercies of a colection ofl the
latest and most perfect "smut, ma
chines," " cleaners" "blewe. - s,"
and other devices;, which entirely
separates the wheat from every
foreign substance, - and reject imper
fect grains, besides thoroughly
clearing the sound kernels Fran
whatever would injure the flour.
A feature of this cleaning room
is the apparatus which is called the
suckers" and which keeps the at
mosphere free from_ the dust which
is given out from the cleaners and ;
which is so deleterious to the work
men. This sucker is simply 'a large 6
modern flue opening near the floor
and passingr through the - roff. A 7 8
strong current of air is fiL f orced
through this, and the result, is a
most perfect ventilation of .the air
- in the room.
- .Afterbeing cleaned the wheat goes
to the millstones, and from theM the
coarse flour is carried to the bolts,
where the different grades of bran,
" shorts," &c., are separated] from,
it; and the heated flour is carried to
the top of the building, where it is
cooled by being carried through a
- series of shallow troughs by means
of Archimidean screws. Some idea
of the extent o£ .the machinery re
quired in a large . mill may bel gath
ered from the fact that thirty miles
of cloth - are required to cover the
- reels in the bolting machines.; .
After being cooled • the flb ur is
ready for .packing, which i also
done by - machinery, The flour
falls down a tuhe; which is funnel
shaped at its size to exactly fit into
a barrel. The barrel is wheoleil un
der the spout, the tube lowered to:
the bottom (or the barrels ised),
and a piston, m'orked by . steam,
packs the flour in the barrel,l which
is gradually lowered until it iSifilled,
when it makes way for the next.

CuEESE AS FOOD.—Good cheese
is very, nntritious,,
itseven' more so
than eggs. Cheese varies Wonder
fully in composition; but when
properly made, it contains ahOut
one-third water, one-third albumi
nous material, one-fourth fat, and
about five per cent. mineral patter.
One-half pound of good cheese con
tains as much nitrogenous matter as
a pound of the best meat, and one
third of a pound fis much fat as a
pound of averaemeat. Old cheese
however, though: not unwholesome,
cannot be eaten in large I enough
_quantities to be useful as food.
- - Very, new cheese, on the other hand,
is-lass easy of digestion. Cheese
dtticult to keep in warm
and easily decays in ail places
unless properly oared for. i Mouldy
and decayed cheese unwholesome,
and can always be told by the taste.
American cheese is not so jgood as
• ,English or Swiss ; still, the best
American cheese is .•veiv good.
The English working cksses use
bread ind "cheesee very largely as
an article of diet. The Americans
uso it as a relish and 14ury, but
rarely as an article of nourishment.
We believe Americans use 1.00 much
meat. Those who wish for a sub
,stitute will find it in good eggs agd
cheese. With these foods
,they
need rarely or never use ' L meat at

ADULTERATION IN BUTTER.-
Thousands of pounds of butter are
daily sold in the city of New York,
which arc adulterated with• a sub
stance extracted. from cotton-seed
oil. It is creditable to the farmers;
as 2. class, that they are net open to
the, charge, of adulteratingitheir pro
duce, yet they suffer fromidishonest
competition of dealers who make
up and sell these fraudulent com
pounds,and pass by charaUter of the
genuine article. As a Matter. of
_curiosity we describe an article
which was manufactured in Paris to
supply the — . want of butter
during the late siege. he refuse
materials left after the manufacture
of stearine from 'fatty anithaf mat
ter, such as tallow, etc„ ‘iconsisting
of an oily paste composedlof olcane
and margarine, were 7asli - ed in
water acidulated - with muriatic acid
for the purpose of bleachin
was then . subjected to the laction of
a chemical solution for a !period of
three hours' during -.,which it -was
made to acquire the tasteland color
of butter. This siabstanle from the
cows, was considered an excellent
- substitute for butter,.andlwas readk
ly accepted in place of lit by the
people, who consideredr it much
superior to any other artificial pro
