HOW MUCH MILK FOll ONK POUND
OF BUTTER OR CHEESE ? —Upon this
point many of our practical men dif
fer very materiilly, and always must
differ; not only 'will different dairies
require different amounts of niilk
for one pound of butter or cheese,
but the same difference will also ex-''
. Ist among cows of the same dairy.
It will require much less milk from
one of out pure Alderney cows. to
make a pound of butter, "than from,
one of eomon stock; while the latter
would profitably makd more cheese,
to a given amount of milk than the.
former. A given weight of milk from
a cow, _ well fFI on grain, will make
more butter than the same amount
of milk from the same cow, when
fed on hay alone. In one experiment
recently tried,it was found that eight
thousand pounds made eleven hun
dred and eighty pounds pressed
cheese, len'and one quarter ponuds
of milk made one pound of pressed
cheese.
In anL3ther experiment, .with two
thousand ; five liundred poimds of
milk. 'lt wits found to make seven
ty-two pounds of butter, or thirty
four •and three-quarter

milk to one 'pound of butter, The
common idea is that the =milkrequir
ed for one pound of butter, will mate
three pounds of cheese; but,of course,
the rule is not absolute, but will'vary
with the cow..

TUE POULTRY YARD.—Those beat
able to judge, say that a flock of
- fowls of the usual size kept on farms
if well . cared for, will yield annualy
'an equivalent to the milk of 'one
cow. For this reason it pays to keep
a flock of fowls,•and give them care
ful' attention. It is easy to keep
them in good condition; if any
thought is bestowed upon them.
It is necessary to . change the
• cocks yearly in order. to keep up
the vigor and value of the progeny.
They must.be kept in a clean and
dry roost, i and if posSible on dry, or
at least well-drained ranee . •To se
cure cleanliness and freedom from in
sects, the lien-house must frequently
be cleaned ent,the floors-suppliel witk
fresh earth, iwhich is the best disin
. fectant, and the roost brushed down, .
or .Submitted to the fumes of burning.

Fowls are omniverous, eating every
thing that otherianimals,will, and
fact thriving better on a mixture of
animal, vegetable, and, grain food,
than if fed on a single article. This
. fact makes them a general scavenger
about the farm-house.-

at sixty cents per dozen, and at these

TO CLEAN PAlNT.—use but little
water at a time ; keep it warm and
clean by_changing often. A flannel
cloth is better than cotton. Be care
fulpf soap. Put but alittle slap or
skim-milk in the water; addl soap
to the cloth when needed. A !sharp
piece 'of soft wood is indispensable
•
fqr the corners ; the point will be
come like -paintbrush. A Saucer
of sifted ashes,used where paint is
badly smoked or fly-specks are thick,
is better than soap; wipe -last with
clean wet towel, don't spill al drop,
of water. Never put soap on glass
unless it can be well rinsed, which
can never be the case with windows;
wash off dirt in clean warm water
and dry; then with a paste of wlit
,, ineand water, and with a little cloth,
place a little in the center of each
pane. With another cloth rinse
over tfie glass; next rub off with a
dry cloth till the. window shines

jelly, take a large chicken, - cut it up
into small pieces, bruise the :bones,
put the:whole into a stonej r ar, with
a cover that wilhuake it water=tight.
Set the jar in a ,large.kettle.of
boil
-izib water, and keep it boiling for
•. three, hours. Then ".strain of the
liquid,' • and season it slightly with
salt, pepper, and mace, or with loaf
sugar and lemon juice, according, to
= the taste of the person for whom it
is
,intended. Return the framents
of the Chicken to the jar, and set it
gain in a kettle of boiling i water.
You will find that von can eollect
nearly. as much jelly by the second
boiling. This jelly may be made of
an old fowl. - '
