A I pTIEW WAY TO COOK MEAT.- A
good way to cook meat is to seal it
-in a vessel hermetically tight. Cook
t ed t t ub a long time in its own juice,
it is endered very tender, and has a
pec iar appetizing flavor. Take an
earthen jar that will stand heat, with
. tight fitting cover. If beef is to be
the dish for dinner, cut it in conven
_ lent pieces, lay them in the jar, rub
eachi piece with salt and pepper and
a little lump of snow, and put in a
-littW water ; then P lay on a piece Of
thick butter and , paper, and press
down the. cover. If you think, it will
allo4 any steam tol escape,mix shorts
or ri l e meal with water to'a paste ;
press strips of jthis all around the
edget.of the cover. Bake in a moder
ate civen four or ifive tours, according
to the tenderness of meat. Chicken
, or marks are excellent cooked in
this lway. The toughest meat is ren

none of the nutritious matter is wast
