soap ; twO pounds sal soda ; ten
quarts soft" water ; - boil till it is all
dissolved.

tles, min - stores, maybe stopped by
six parts well- pulverized dry clay,
and one part iron filing ; make into
a paste with boiling linseed oil.

the middle of the ham ; pour boiling
Nrater over them, and let them stand
ten- minutes to freshen ; wipe the
slices dry, and broil quickly.

one cup flour, two. tablespoonfuls
melted butter, three eggs, one tea=
spoonful lemon essence,one teaspoon
ful - cream tarter, half teaspoonful
soda.
FEATIIESED CAM—Three cups .of
tlonr, two of sugar, half cup of but
ter, and the same amount of milk„
two eggs, one teaspoonful cream tar
ter, half:teaspoonful soda. 'Flavor
with lemon.
POUND CAKE, Most:am—Two cups
butter, three cups sugar, ten eggs,
fly° cups flour. Stir the butter and
sugar to a cream, add the yolks well
beaten, then the flour, lastly the
whites.
Sroxot Ca:sm.—Break two
cgs pan teacup ,eacup ; beat slightly ; fill
up with thick, sweet cream ; then
ild,l one cup of white sugar; one cup
t:f 'lour ; one teaspoonful of cream
.of tarter ; one half a teaspoonful of
soda.. Flavor with lemon.

vitriol in a basin of water, and wash
without soap. When the stains are
entirely removed, and not before,
wash completely in cold water (if
warm so much the better', using no
soap until the acid is entirely off..

carrots boiled and rubbed through a
eullender, half pound seeded raisins,
three quarters of a pound suet, four
tablespoonfuls sugar, eight

cream sauce, flavored to taste.

milk left standing m a room where
-oatients are sick, becomes permeated
with the subtle poison - of the disease.
Contagion has also been spread
through milk, by reason of persons
recovering from sickness attending
to the labor of.the •dairy. The kind
~f , - or!fodder an-which the cows
feed also gives a peculiar flavor and
, .inality to their milk. In Addition to
these facts, it has recently been de
nfonstrated that the most startling
eOnsequenees may ensue from the
animals drinking, i stagnant water.
Professor taw, of Cornell tuiversi-
has examined with a microscope,
milk of an;unusual, roby appearance,
and fonniU it full :of those fungi, or
vegetable Organisms, that abound in
stagnant eater. On inquiry,le found
that the cows from Which it came
had only (stagnant water to drink,
and further investigation revealed
tilt , fact that the blood of the ani-
seals teemo with. these fungi, and
-that the-cpwa were in a feverish, un
healthy Condition: The warning
which thiS discovery ought to con
vey is eery simple. It is the duty of
dnirytneiq to see that their cattle
have a supply 4:1. - pure, sweet water.

water that a judicious: concern for
tile health of the community should
induce t..l+oa to employ none but the
very cleanest.
OF CROPS IN NATtRE.-It
is generally considered - that the prin
ciple of rotation in crops is a Modern
_discovery;; ) and yet nature has work
ed in thisi way from the' commence
ment. Proofs of this are seen in the
regetable,remains of rocksi and coal
beds, and} even now we see ,the `same
principle t work whenever we cut
down, a pi e woods; which if Allowed
to grow in timbers again is replaced
with deciduous trees, as oaks, beech
es, Maplei, etc., while a beech or ma
ple cir oal, wood cut -off will be re
placed wii h pines. Here is undoubt
edly rotation of crops,. and we mere
ly followilature when we adopt the
principle in oar agricultural opera
tions.
