11 Proper Time to Skim The milk should' be "slimmed as soon as all the : cream hasrim' en, and before the milk has - thickened. The enact time required for the cream •to rise, will of course depend:uPon . the temperature, but a little experience will aid one to tell. At' the time the cream should be•removed, it will have a bright, healthy appearance--a rich yellow, uniform, and such odb:erency of particles as will enabl&one some.; , times to remove the entire cream at one dip of the skimmer. If allowed to stand too long withoutskimming, both the-quantity and the quality of the cream will be seriously affected ; the surface will become discolored, blotched and knobby, while under neath the cream is rapidly yielding to the corrosive tendency of the acid in the milk. The thickest cream may be as surely destroyed by stand ing on the milk, as would the finest fabrick in a bath -of sulphuric acid. When thus destroyed, the cream is replacgd by a thin, watery substance having no resemblance to milk or Cream. Those facts, which may be easily verified, show how essential it is the cream should be taken off beforQ the milk has acquired any great, amount of acidity. Yet, in order to make the largest cittlintity of butter, care must be taken not remove the cream too soon. Many neat and thrifty house wives ihake a practice of " slamming up' the milk at stated intervals, so as to be through with the job. This is, of course very pleasant., but in, solves considerable loss, as they do not get the full cream from the new est milk, The milk should all be skimmed at the same age, provided it has the same conditions as regards temperature, - etc. It follows, then, that some milk should be skimmed every night and every morning."— Prize Essay of Mrs. Deane, of Illinois. Proper Treatment of Oohs. Ovet-feeding with any kind of food, particularly with grain, is one of the worst evils that can befall a colt. What he wants is growth, not fat, not mettle, artifrinlly infused or awakened. This is a premature call on the future strength. - Good tender hay and grass are the feed, winter and summer, for a colt, varied a little if desired, but not with grain. A lit tle corn or barley may be given where 'the hay is poor, Over-ripened or ill cured. Thus a colt should grow, re serving its strength, and grow into tractability as well, the whole thing being carried on, growth .and tuition, till at the proper age yda have a horse in limb and in training. You then stand a chance to have a sound horse, a well-developed, kind and tractable one that you can rely upon. At six and seven, and thence for many years, your horse will be a ser viceable animal, an instrument train ed to order; and you are the one-that should drive him and keep . him; no one will get the good out of him that you will. But Never over-feed, never over-do; never abuse because you may be passionate, never over-heat nor expose to the cold after heating; and keep out of the cold rains. LIVE WEIGHT IN Al4 - &i S.—The amount of meat obtained from a do mestic animal sold by live weight is quite variable. From the statistics derived from the public slaughter house of Pariss and Brussels, it ap pears that certain animals yield as much as seventy per cent. of meat, while others give only fifty per cent. The mean weight of meat, produced is calcnlated at fifty-eight per cent. of the live weight, in beef cattle. In the case of sheep the propottion is from forty to: fifty per: cent. It ap pears that different products from - oxen and sheep are as follows: An ox of the live weight of 1,332 potinds, yields—meat 771.4 pounds; skin, 110.2; grease, 87; blood 55.1; feet and hoofs, 22; head 11; tongue, 6.60; lungs and heart, 15.33; liver and spleen, 20.05; intestines; - 6645; loss and evaporation, 154,352; muting the total •of 1,332 pounds. ^The - product from a sheep weighing 110.2 pounds is as follows: Meat, 55:1; head, 408; 'feet and hoofs, 2.204; blood, 4.408; tongue, lungs and heart, liver and spleen, 4.408; intestines, 6.612; loss and evaporation,lB.736—making the total of 110.2 pounds. M. Youn Tams-Muse:a Low.— Train your pear trees for .garden or field use, so that they will branch at a distance of one or two feet from the ground. The advantages are easily enumerated: lst. As IRISH STEW.—Take two pounds of small thick mutton-chops, with or without fat, according to your taste; take also four pounds of good pota toes, weighed after. they are pared, slice theta thick and put a portion of them. in a layer"in a stew pan; season the mutton well with pepper and place some of it on the potatoes; cover it with another layer and pro ceed in like manner with all, reserv- ing plenty of the vegetables for the ' , top; pour in three--quarters of a pint 'of water and add when the stow be- gins to boil an ounces of salt. Let s it simmer gently two hours and serve it very hot. When the addition of an onion is liked, mince it and strew ,it over the potatoes. Por.kro Brssouz—Fazsca.—MaSh and season the potatoes with salt and white pepper and cayenne, and mix with plenty of minced paraley and a small quantity of green onions, add sufficient yolks of eggs to bind the mixture together; roll into small balls and fry them in plenty of lard or but ter over a moderate fire, or they will be too much browned before they are done through. SWEET-POTATO Poste--One and three-fourths of a poand of sweet-po tatoes boiled and mashed, stir in while warm two tablespoons of but ter; beat these well, add a little salt, three tableipoons of good brown su gar, one of ground ginger; beat in three gills of milk; when quite light from beating ponr into a buttered pan, and ' three-fourths of an hour.
