The mixture should be thoroughly
shovelled over every two or three
weeks; the longer it is mixed before
using the better it will be—and three
or four months is the least time that
should elapse between the mixing and
the using. " •
In England the value of this com
pound is more generally understood,
and it is there used in large amounts
for almost all crops except tax; to
which is was found to be injurious,
by injuring the fibre though it will
materially increase the yield of seed.
Now is the time to mix , it for the
wheat crop of next fall, in; order that
it may have all possible time. to pro
duce the change which takes place in
its constituents—the saltand lime be
ing, decomposed, and two rnew and
valuable compounds are formed •in
their place—at least so our chemists
tell us; anyhow, it is firt rate manure
and -at the same time not very expen
sive, and is easily made on a small

REMOVING EVERGREENS.—We have
always very much questioned -the
propriety of removing evergreen tires
—such as the spruces and firs—when
they have reache4 a size of fifteen
foot and upward, or whenever a
truck is required to remove them. So
fai we have - not seen any tree so re
moved that was not ruined by having
its lower branches bruised, broken,
in , torn off. Sums may have escaped
all injury, but we never saw one,
while we have seen hundreds of the
others, not one of which would we
have upon our premises. Perfect
trees can be purchased at our first
class nurseries as much as eight feet
high, which can be transplanted safe
ly; and we should suppose that these
would be large enough to meet every
requirement, especially as while they
would be truly ornamental and a
pleasure to look upon, and daily im
proving, the others would be a per

FRENCH Purrsm.—Mix two eggs
well beaten and strained, with as
lunch new milk and flour as shall
make one thick pancake, which fry as
pale as you can. Pound it in a Mor
tar quite smooth, and add "the yolk
of four and whites of two eggs, one
large spoonful of orange-flower water
or cinnamon water, one .ounce of
blanched almonds beaten to paste,
two ounces of white sugar, and , one
quarter of a small nutmeg. , Pound
it all till it becomes smooth batter.

SALAD is desirable at this season of
the year but not always readily pro
cured. We see in a respectable au
thority, a plan for growing it - by a
lightening speed—we can hardly be
lieve that good sized heads can be
made in the time given, although the
assurance is gravelygiVen that it is
so. Will somebody either explode or
confirm the statement.
It is said that heads of salad can
be produced in winter in from twen
ty-four to forty-eight hours, by taking
a box filled with rich earth, in which
one-third part ipf slacked lime has
been mixed, and watering the earth
with lukewarm water; then taking
lettuce seed, which has been previous
ly softened by soaking in strong
brandy twenty-four hours, and sow
ing it in the usual way.
CIMINO BEEF.—For every pound of
• beef, use pound of saltpetre, 4
pounds of coarse 14n.„(rtir and four
quarts of salt. We have seen beef
cured after this recipe, which was as
good through the summer and a year
after pickling as any time during the
winter. The materials to be well
mixed, the beef thoroughly rubbed
with it, and packed as closely as pos
sible in a barrel. If pounded down
iu packing, so much the better. No
water need be added. t
BOILING POTATOIS.—Let the water
boil before putting the potatoes in.
When done, pour off the water and
scatter three or four teaspoonfuls of
salt in, cover the pot with a coarse
cloth, and return it to the fire for a
short time. Watery potatoes are
made mealy by this process. How
simple is the process, yet how few
understand it !
JENNY Lein's PUDDING.—Grate the
crumb of half u loaf, butter the dish
well,. and lay in a thick layer of
,the
crumbs; pare ten or twelve apples,
cut them down, and put a layer of
them in'and sugar; then crumbs al
ternately, until the dish is full; a bit
of butter on the top, and , bake it in
an oven. An excellent and econom
ical pudding.
' JELLY.-Put one ounce of
isinglass and a half a drachm of chives
into a quart of water. Boil it d6ivn
t{) a pint, strain it upon .one pound of
loaf sug,ar, and when cold add a little
wine, when it will be fit for use. A
very nourishing beverage may be
made by merely boiling the isinglass
with milk, and sweetening with lump
RICE (;.use. —Take six eggs, with
their weight in fine sugar, andin but
ter-also. and half their.weight of flour
of rice. half of wheaten flour; make
the cake as directed for the Maderia
cake, but throw in the rice• after the
flour; then add the butter in the usu
al way, and bake the cake about an
hour and ten minutes. 'Give any fla
vor that is liked.
ONE pound of meat put in a . pots-fOf
boilin 'l, water, and then milked
"done," wilt furnish more nutriment
than three pounds which have soak
ed in the pot'untill the water has at
tained the boiling . point.
