Our agriculturalry rar •
'raiders
. will be
glad to know what licirace' Greeley
thin of " Country Fexining,". end
for their benefit we give below enlist
little speech which he znadi the]
New York press dinner last Saturds4.
The toast which. called tip ldr.Gras l
ley was " Country Farming, and City
Editing," and. this is what. he 0,14
whickwas received swith the most
generonsaipplause:
I don't 'grate understand whether.l
mu expected to demonstrate an
agreement or a contrariety. between
these two things. At any rate, if
the purpose of the sentiment is to
affirm that one of these pirsuita is
delightful and attractive as the other,
I respectfully non-concur. As to city
editing, I. have had something more
of it than I have desired, j and more
than I could enjoy. As tamy farm
ing. there are gentlemei who have
spoken of it rather more freely than
their limited knowledge of the sub . -
ject would admit. I think I have
seen some celebrated statements of
the cost of each turnip—and these
statements were made by gentlemen.
who have not been'ganaa thought'
so attentive to - the cost of things as
these calculations would seem toim
ply. I have, not made any such cal
culations myself, for I have been• a
little shy 'of doing so.
Let me, however, say a few words
about country fanning, which is a
thing I very much believe in. Having
done some share of Work in the
world, I lay down this proposition:
That all men or women who can get
their work done by 8 o'cic, ock at night
need not consider their condition a
hard one. When it stretches far into
the night-11,12, 1,2, 3,—lt begins to
be irksome. I find it irksome. lam
not now so fond of sitting up with a
newspaper altnight—nor with any
body else. This, then, I can say for
country farming, that while it has
some rugged aspects, and does not
promise any such brilliant and rapid
advances to fortune as -some of our
friends like to achieve in Wall street,
it is just about the safest, and surest
thing any one can engage in; and it
is, moreover, a tranquil and certain
delight to any human .heing—who
can enjoy his own society. My little
place, while it is nothing to brag of
—there is this to be said about it: I
have the most delightful barn full of
corn, rich, golden corn, that ever you
saw in your lives. N•fx,*that is some
thing achieved, something to look at.
I have been at work on the press for
forty Years; and this seems to be the
hardship. You work for days, and
months, and years, and what have
you to show ? Something, I hope,
in mental growth ; Ed - rimming in
firmress of purpose; something n
clearness of intention, but outward
ly ? Nothing 1 Thirty years haVe pass
ed away, and whereis the trait of all
that labor ? How can your labors
compare with those of the man who
has produced a book ? And here let
me say that, in my judgement, no
good book ever was or can be pro
duced on the instigation of a $50,000
check. Such books as that of John
Bunyan have been produced by au
thors who never thought they would
get a dime for them. These are the
books that live. The books that the
$50,000 will buy—will they sell ? I
hope so; but the world is charitable
and soon forgets them. _
Country farming will help also to
develope one of the phases of the
• question of woman's rights—whereon
I have not so full a part as some of
our Mends would wish. „Country
farming gives just the right field for
the developement of your energies.
Any number of you are wanted to take
part in country farming. You need
not dispute or clamor—there it is.
"The world is all before you where
too choose." If any lady wants her
rights—l am a wood-chopper—l will
furnish an axe and the trees, and give
her scope and verge enough. There
are plenty of opportunities; so, then,
why don't some of our friends who
want their rights come out into the
country and take them? There need
be uo controversy. Wide enough is
the World; and there is work enough
for all. I hope that some of this din
and controversy will roll itself abroad
into work;, and that our excellent
friend, " th e last, best gift," and so on,
will achieve her rights with her own
right hand. _
Cooling Food for Stock.
The Massachusetts State Board of
Agriculture discussed this subject at
their -muting in December, 1867, as
we find in the report of that body for
1867-8. The speakers were all men
of high character, mature years, ex
perienced in Ahe breeding, keeping
and fattening of cattle, most of them
engagedin the dairy business—and
there was but little difference of opin
ion asoto the use and value of feed
cooked in some way. Prof. Aganiz,
the illustrious naturalist, shows in
the following clear, plain and unmis
• takable language, the reason why
food for domestic animals should be
prepared it being promised that the
food we give our stock is not that
which nature provides at first hands,
but is dried and mechanically altered
in many ways. Soaking or steaming
restores hay to its wonted bulk and
succulence; and Prof: Agassiz said
of this mode of preparing food in
general: "It must save the secretion
of saliva to an enormous -extent, and
therefore relieve the, animal from a
physiological labor which is very
manifest. I have no doubt that must
be the chief source of relief to the
cattle, because dry food must be
softened in order to be digested; and
it must be done by the secretions of
the month—by the secretory surfaces
:of the alimentary canal—and,in fact,
`q• Alba secretory surfaces of the
...digestive apparatus. Now, where
does that come from ? From the
blood: and ifyou supply the food so
far softened that the animal is re
lieved from that physiological labor,
Foil place your animal in a much bet
ter condition for its work. I have
no doubts that there is the explana
tion of your results—that your steam
performs a part of the operation
which your animal has to do for.
itself by its secretion."
nos rs Pon—The Royal Horti
cultural Society of London hifia over
one hundred and.thirty varieties of
figs, all grown Wider pot culture.
This is probably tlj largest and most
complete collection in existence.—
Over thirty varieties of fruit were ex
hibited at the " Manchester Horticul
tural show last summer. '
MAWDVST YOU GRAPE VENT...N.-Mr.
Holton denounces the use of sawdust
in any shape, ,unless carefully com
posted and completely decayed, as.a
mulch foe grapes or as a mechanical
mixture in the soil. His experience
in its use had cost him $3,000, and
he had used the least objectionable
kind be knew of.
