We are sending wheat to towns that were in our colonial clays the vineries both of our own And foreign , nations, and unless the aristocratic' Virginian is content, to awoke tobacco inferior to • that in which his ancestors indulged, •it is certain that he must receive his sup pl yof the cherished narcotic from beyond the bcirders of the Old Do-. minion. The calm of the diminution of the material wealth of the country, lief in the foot that we ireisitsily seed= ing away from the land, with each successive harvest, those things on which the soil depends for its fertili t•y. We all know that`-wheat is an exhaustive crop; that it nibs the foil of its rich phosphates and seitral other salts that are essential to the growth . of the plant ! which, more' than any other, supplies the food for man. Let us see what becomes of these -essential elements of wheat growth: They srevery largely found in the covering of the berry. This, we all know, in the great majority of cases, is separated from the whiter portions of the flour -at the mills situated at a distance from where the: grain is produced. This bran and shorts are fed to cattle in large towns, and though some will find its wav into village gardens, by far the larger portions are hurried in pita, used in the place of soil for filling places that are required to be raised, or taken out into bodies of water by means of boats or through sewers. Of the bran and shorts of wheat, sad the entire portions of other grains that are fed to stock on the farm, some, of course, is returned to the land and shows its good effects in the crops that are produced from it. But the animals that are raised from them, as well as the dairy pro ducts derived from the Milk so pro (laced, are sent to di,-tent markets. Even the bones of tu, animals that die from disease or n, eident, or are %langhtered for beef. are now eagerly c ollected, and find h.eir way for the most part to forei;.i. boxes. To-day many an English wheat field tow • French vineyard is i•ejoieeing :in fer tility derived front the bones of slaughtered animals raised in the valley of the Mississippi. • • Every year thousands of ac ea of laud are put in flax, a crop that di teiniehes the productiveness, of the reel for several successive Seasons. The oil is expressed from the seed to used in painting houses, but near ly. all the `oil cakes are sent across the sea. The proprietor of larg wit linseed oil works in the lest in forrned ns recently that never over two per cent. of their oil cake found a market in this country-. The re hounder goes to England. The En glish farmer buys this product of the' flax mill, not altogether or principal ly because it is the cheapest food for dairy and stock, but because of the ,tci - i - llent character of the manure that is derived from it.—Prairie Pehner. Coloring Butter in Winter. After severe frosts, when cattle have•', to be fed on cured fodder, even though roots form a large part of their food, the butter lean the rich color the grass has given it, and is but little more attractive in appear ance than so much tallow. There arc various artificiarmeans for color ing it. A carrot, grated into the churn, will communicate a light' golden hue, and • extract of annitto, mixed with hot wder,and left twelve hours to steep, will make a still rich er tint, AnnattO applied directly to the butter itself, is muck more effec tito, and is chiefly used am a coloring agent for both butter and cheese. A slight admixture of turmeric, how ever, heightens the color very much, hut it mist be used most sparingly, 1 as too much of it produces a brim stone color anything but attrac tive. We have found the following plan very satisfactory: Take a quar ter of a pound of annatto„ and a half of of tontine, and steep them together is a pound of melted butter, keeping them over a slow fire for some hours. Then strain through a fine cloth into a jar, add a little salt, and keep in a cool place. When the butter-is half worked, take s small qiumtity of this mixture (expels:we will teach the proportion), milt . % and pour it in a depression in the lump of butter, working it in Wit cools with the btitter that .surrounds it: This will assume a deep reddish color as the added matter combines with it. Then mprfethis thAfou*dy in the mass Until it is all of the same shade. The color, after a little prac tice,may be made equal to the richest ' gold of the June deuyouid the flavor will be 'slightly heightened.— The butter *ill, sa fact, be much more saleable, and really somewhat better. The. most celebrated butter makers about Philadelphia, except those who have Jersey cows, color their butter with pure annatto, which gives it a deep orange color. In. order that their city customers may not know any difference, the 7 use annatto in. summer as well as in winter, told the rich eolor of the crack Philadelphia butter;- which is fondly ascribed to some peculiar quality of Brandywine grace ls really the effect of the use of foreign matter.
