dish of mush are water, salt and corn
meal. The water should be soft, and

color, but white meal is the more
' easily cooked. The -sister should be
boiling hot at the commencment,mid
dle and end of the operation. The
meal shoud be added very slowly, so
as to prevent any lumps being iorm
ed, the cook stirring all the time,and
should never be in such quantities as
,would bring down the temperature of
the water below the boiling point.
. Here lies the secret of making good
mush. The reason that it requires a
high degree of c heat to cook Indian
corn, is that the starch gloubles are
. very hard and compact, and require
mere heat to expand them than the
starch particles contained in rice.i
Mush should be thoroughly cooked
but the cook must guard against its
burning by continual stirring.—

11:POATANCE or DILA.EVAGE.—ThoraRgh
drainage of land is necessary to suc
cess in farming, but.the operation is
too often neglected. When land is
wet in the Spring the soil cannot be
prepared for the crops in proper
time, and even after the seed is put
into the ground, it does not vegetate
until after the stagnant water has
been ,evaporated and the soil 'warmed
by the sun. When Spring crops are
planted or sown late, they do not
cover the ground until the sun's rays
have dried up all the unneccessav
moisture. Lands naturally or arti
ficially drained can be tilled - early in
spring and seed can he got into the
ground at the right time, and the
crops will have covered the ground
before the great heat of summer com-'
; -,and the roots will, be protect
ed fro .s the rays of the sun. The
. Fall is the best season for construct
ing drains.
CAT= PLAGUE; The Lung Dis
ease, or Pleura Pnemurnia,, , is the
most destinctive disease, that tattle
are subjected to. If they are well fed,
and their stables and yards - tire kept
clean, and they are not allowed to
drink stagnant and putrid water,
there will be few cases of lutig disease
-among them. Try and supply them
with fresh, . pure water, and with
plenty of good feed, and You need
have 'no fear of this diease, even
though it seems to be infections. The
State authorities of the several States
should to-operate with each other in
their efforts to suppress it, wherever
it has broken out, and where it has
not, every preventive should be

cudders of cotes and heifers is to apply
..hog's lard warm, with a brush, and
rub it gently with the `hand.'This
Xahould be clohe several times a day,
robbing the udder well each time, to
make it soft. It effects a care in the
