Making Sweet Pickle&
.
To the amorous receipts already
published on this subject, we add the
following :
Cut the tothatoes through, or, if
large, slice in three ; let them stand
in weak „brine over night. To a quart
of vinegar three'pounds of sugar ; in
this vinegar cook the tomatoes until
a fork can easily lie passed through
them. As fist as they are cooked,
take them out with a fork and lay
them down in a jar—say two or three
layers of tomatoes ; sprinkle pulver
ized cinnamon and cloves, and a thin
layer of sugar ; then - alternately to
matoes, spices and sugar, cooking all
the tomatoes in the same vinw, if
necessary, add more sugar and vine
gar. When the jar is filled, cover
the tomatoes with good cider vinegar
cold, throwing away the vinegar in
which the tomatoes were cooked.
Lay some horseradish root over the
top of the pickles, and put a weight
on them to keep it covered. This
nicelpe is equally gOod for ripe en
ctimbers. I have tested it for the
past two. yearS, and found no trouble
in keeping good pickles. •
Pare clingstone peach; just ripe.
To Ibs, of fruit allow 2 ibs, sugar,
pint cider vinegar, 1 table-spoonful
cinnamon, and 1 of cloves, tied in a
thin rag. Use a porcelain kettle.

until the sugar is-.melted ; then add
the fruit, and boil until tender. Re
move the fruit with a skinner, and
boil the liquor to a thick syrup ;
return the fruit and simmer until
done ; pour out and let stand till
cool ; then seal up tight, remoting
the spice. If they do not keep, and
:Ire not excellent, it will not be the
fault of the receipe, for I have had.

Great care should he observed that
the decaying matter and suds do not

poison. When inhaled it acts direct
ly on the blood, thickening it and.
-tuning it black. A. single gallon of it,
mixed with 1,200 of air, will render
it poisonous to birds, and one gallon
100 will kill a dog. Many of our
pcople are not afliciently careful
about allowing such "sinks of iniqui
ty" to exist anar their dwellings.—
