vided into three claseesl- tkeadtar,
the Milk and Cheese, and thel . 'arnily

ties of the .different breeds : of -cattle
in this country, and their adaptabili
ty to the different Dairies mentioned
• above.
DURHAM on Snow,
breed is so well known thioughout
the country, that it weed be_useless
to go into a detailed description of
their qualities. For beef they can
not be excelled; and they , make geed
omen. As milkers, they are best
adapted to the Wilk Dairy ; but their
propensity to take on fat unfits WM
for standard milkers unless =weed
with some other breed.
DEVON/L--This breed is not, of as
large size as the Durham's. The De -
Qn s make splendid beef and oxen: In
quality I prefer Dev Ons. to Darhazos
for beef. Their yield of milk is• not
as large as
,that of the Dauinuits, but
of a superior quality.
Aimulum—Tbis breed takes its
name from the co u nt of Ayrin Scot
land, and by some are sapposedtobe
a cross of the Durham , : and Jersey.
They are not as large as Durbams,
but are larger ' than Jerseys, They
fatten much more readily than the
Jerseys, give a large quantity of milk,
whereby for the Milk Dairythey can
not be excelled, and they are also
adapted to the other dairies when
the Hai color of the Jersey milk is
not desired.
Jrasxra.—The Jerseys are a small
breed of catfle originated in the Is
land of Jersey, between England and
France. For beef and quantity of
milk they i!annot be recommended,
but for buttfr-making qualities their
milk is gide celebrated. They are
not deep milkers, but the cream from
their milk is not equaled by any
known brbed of cows in - the world,
being very rich, thick and firm, of a
light orange color, and making most
delicious butter of the same complex
ion. The skimmed milk of _a Jersey
is equal to the cream from milk of
other breeds, and it is thought by
some, that notwithstanding the small
quantity of milk thq yield, more but
ter can be made from eight quarts of
their milk, than can be made from
twelve quarts from other breeds. For
the Family Dairy the Jersey cow is
unexcelled.
As the Newfords, Galloways, Kerry
and Dutch cattle are not noted for
dairy qualities, I nll not describe
theni.
For general dairy
_purposes I con
sider the. cross of the Ayrshire and
Jersey. to be unexcelled by any breed
or cross-breeds. They yield more
value in milk and ,butter, are flush
milkers, easily kept, of good size and
form. In the ASndure-Jersey cow
we hare 'the beef-making qualities,
large quantity of milk, and hardiness
of the first united to the richness of
milk of the latter, making a very de
sirable cow for general purposes.
AGRICOLA.
Live, Stoat.
No man- pan be a real bona Me
farmer without live stock, and farm
em may be clamed in some measure
acccrrdiiig to the quality of the ani
mals. Away from 'cities and pope
' lons places it is impossible to keep
up the fertility Of the land to audio
it pay unless, the produce is 'chiefly
consumed by the live stock and con
verted into meat, milk, wool, or ani
mals for use by other people, as pay
'pent to the farmer for his time and
capital, and transmuted into manure
as a reward to the land, without
which return no farm can be kept
in condition good 'enough to pay'for
cultivation. This is the first secret
• of successfull farming away from
places where it answers to send to
market hay, straw, garden stuff, tkc.,
but there are others which unfold
themselves .in the course of raising
and feeding. The next in importance
is to maina,ge so that no time may be
lost in the growth of theyoung, and
to house and feed in su ch a =pater
as to carry on the improvement
wrought in summer through the an
tumn/winter and spring ; after which
the grand secret is 'to breed and raise
7 such animals only as •command the
highest market price,which is as
easily done as to continue breeding
an nnthrifty and unprofitable race..
If a farmer has a useful common
grade stock, healthy and good breed
ers, tuitions, &C., but the progeny
never selling i for more than• baret7
sufficient to' enable 'him to pay Ins
way, just recon the difference it
would make to him if he went to a
good breeder, say of Short-Horn for
instance,Und bought a bull, minding
when, purchasing to see the dam of
the animal he selects, for it he wants
rail as well as meat, he must see
-that she gives some ; then when his
sull's stock comes into the herd, tak
ing the place of the' old ones, he will
reap an advantage every way. It
will be the same with sheep ; the
laying but of somethin,g extra for a
'ram or rams from the first-rate flock,
will add to his wool and mutton, as
also cause his future young ones to
conic to maturity earher, and, what
will be of great consequence to the
farmers of this country for -years to
come, these better bred animals ata
be brought out fat at that season of
the year when common stock is low
in flesh, and all varieties of meat sell
for 20 or 30 per cent more than at
other times. Live stock and plenty
of it, is the great preventative to a
farm ru n ning out, and to the owner
becoming poor ; it will brighten thd
faciilties of a bad fanner, and draw
out the latent powers of mind which
have been =stag years,: for :with
a iiitavy stock of .all kinds of eattie
and sheep, he has to foimt kir each
day, w ee k; month and year; aye,and
