These are questions which women of ObeerVa tion can answer readily; and , which.' have been understood for Years by many besides myself, bet our yokes are seldom heard, and when one does speak, it is only to those of her own sex, for she shrinks from charging the real culprits with the carload the - disastrous prbduction. t he United At this season, in most parts of the United States, there are complain . ings of the trouble in ehurning,of the length of time in "fetching" the but ter, and the bothhi in making the cream sour enough to be churnedelic: -Now I have none of.. these grievan ces ; mine comes-by being churned from twenty minutes to half salon; and my cream is generally quite sweet,- for the calves we are weaning and the household all the iir vi milk • from twenty-four to irty-six hours after it is milked, ivh it.LlAfore it is acid, and as Lehn twioe_e week, my cream keeps fresh sweet. The causes for the extatimul bin-: dram* and bad quali of butter, are` • the poor feed, or the improper food givenomttiag the milk ilea bad - dairy, not keeping the utensils clean, and setting women and children to churn. This operation, when more than two or three cows are kept, should be done-by a strong man,whb is resolved to make it come s light away. The motion, at this time of the year in particular, should always be kept up without cessation till the butter , sepa rates and begins to collect ; for a stop rittgr.:2, of two minutes only will do and when the cream swellerthat is the sign there will be butter in a few minutes if the t, movement is per severed in; but the dasher moves so hard that the &kerning slacks or ceas es, and ruin will be' the consequence, for water is often added, (which is altogether wrcing, unless in a barrel churn, when there ie no alternative,) or sometimes the cream is half taken out, and a regular mess made. When everything is conducted right at the . dairy, the remedy for bad but ter is to have good sweet food for the cows,given to them in a very regular manner, so that they never pine and become uneasy ; give them no hay - that-was made from grass of any . kind that had gone out of bloom prior to i being cut. Some pretend that young grass cannot be cured. Whew i How is it cared in England; where there are ten showers for every One here, and the heat is fifteen degrees' less ? Be sure not to give any. filthy stuff, called swill, though cows can have • .their tastes perverted, so as to make them relish nasty; greasy dish-water, sour milk, &a.; but let them eat' green hay, fodder off corn-stalks that have ,been cut quite green and well cured, -and pumpkins, carrots or field-beet, but no turnips or swedes ; any kind of meal, shorts osbran, fresh and sweet, and as far as my, experience goes, for fine flavored butter, I prefer everything given in a natural way— that is,no dusty or coarse food cooked, steamed or made up in any way, for it will be inferior in effect. My bus band has always , been successful in forcing great quantities of milk, and having proved elmostevery variety of food, our butter is uniformly good, and as the whole of the articles,which produce - nice-tasting, rich butter, con duce to the health of the cows, Ido not recollect ever having a sick ani. mal while in milk. , . 'The cream rises best. in winter when the dairy is protected at the windows, &0., so that no frosty air can enter. I only skim once, which is immediately prior to , using the . milk, and, as before stated, that is geeerally all used for cooking, drink ing at table, and for calves weaned by hand. Thus, though lam ecru , piously exact in keeping everything sweet, and having nothing in the dairy to taint the atmosphere, 'my i milk s put away in twenty-four hours in summer and in thirtyeix in win ter. Irregularity in the time of milking, changing the milkers, one person milking one day or week and another the next, and irritating the cows by any means;. such as driving them too fast, having a dog to scare them, dis turbing them by putting horses, oxen or strange cattle among them, all tend to injure them and their milk. Any one with capacity enough to escape being termed an idiot, or even a little child, may understand the plain, simple truth of the cow being a kind of living machine for convert. ing Certain articles into milk, and it is of as much consequence to feed this structure with good commodities of the sight sort, as it is to Wire the proper material to feed machinery to make the best cloth, the_finest linen, or the richest silks. Therefore, if poor hay, musty meal, mouldy corn stalks, greasy, sour slops, or any im pure, valueless or innutritions matter be given to milch cattle, no dairy maid, however clever she may be,can make good butter but if nice green, sweet hay,those kinds of roots which impart no unpleasant taste,and fresh, luscious meal be given, it must be a dirty, lazy or foolish woman that can ,make ' i nferior butter.
