Some families, keeping only a few cows, and living at au -ineonveident distance from any' "cheese factory," -would like to Utake a few &Oil, _du ring the heat of summer, for family nee, if no- more, and are deterred from the wentof practical knowledge. To such I address myself with the follew-, ing few practical directions. A few necessary, simple liticlee are needed to commence with these can- be had from the , agricultural im plement stores generally. A brass kettle or cheeEce , tub, or both, to heat and set the' milk. in; a good basket to drain the curd in ; a lever press and . hoops with followers,to press the cheese ; - alinen strainer, and rennet. The beginner will learn more in a single day in visiting an experienced dairy-woman-and watching her ope - rations, than tin several days from printed directions ; yet the good judg ment of most women will scarcely allow of ,a failure when. following plain, practical directions. ' It is commonly practiced to set the milk at night and "run up" but once a dat', but a--richer cheese is made by running up after each milking. I will' only describe the common practice which lam familiar with. Set the milk at night the same as for butter. In the morning, while the bows are - being milked, remove the cream, and heat the night's milk to the tempera ture of new milk. The morning's milk is now strained, and mixed with the night's milk in the kettle or 4yb, Its'suits. The milk being thus made ready the rennet is added and allowed to stand quietly till the "curd comes; " which should be in 20 to 80 minutes. The quantity of rennet to add is do termineil after - trial,more being added if the curd 'does not come in time.— The rennet consists of the salted and' dried stomach of the calf, prepared usually by the butchers. This is pre pared for cheese-making by taking a piece two or three inches square and soaking it in belle pint of water over night in a suitable cup. When the curd has "come," carefully cut it across both ways, about 1-I or 2 inch ' es apart, with a long-bladed knife reaching to the bottom ; let it stand for the whey to separate, and then carefully dip it off, and work the curd gently with the hand, to favor sepa ration of the whey. To make the curd fir Mer, some of the whey 'is warmed to-feel somewhat warm to the hand, and poured over the curd and stirred,and left to stand a moment to heat the card evenly, when it is dipped off and the curd _s dipped into the strainer, laid in the cheese basket over a tub to drain into, and the whey allowed to drain off. If the cheese is to be only one day's curd,it is now salted with about . an ounce of salt to ten pounds of curd ; if two dare curd, the salting is omit -ted till the next day, and the curd tied' up in the strainer and put under a light pressure._ When the next day's curd is prepared they are both cut in small pieces and mixed, when both are scalded, as first described, and after !{lipping into the .strainer and' draining a little, is broken and salted evenly as before directed. It is now ready for the press, - and is taken in the,strainer, put in the hoop, f . and put to .press under a moderato _ss i - preure4 ---After about twelve hours it is taken :from the press,therstrainer opened, .. , :the cheese corners trim _ _ , -4. med, if n6essuy, turned the other side up, 'put inthe press hoop,- and ptit back to press under heavies pres sure, which may be gradually in creased till done The time the cheese should remain under presAure depends upon the power applied; usually 24 to 36 hours will be suffi cient for a common sized one. If the pressure is too heavy at first, it will press out the "juice," and the cheese will be of poorer quality than where more moderate pressure is used. When the cheese comes from the press it is put on a board about the size of the diameter of the cheese, and set away in the drying room, which should be neither too warm nor too cool, as in a cool,plamp room they cure slowly, and are apt to monld; if too warm they are apt to sp6ad, etc.; to prevent this thin cot ton; Val:sieges are put around the cheese when first taken from the . presf, and sometimes pressed on.— Daily;turning, rubbing to keep from ' moulding and getting out-of shape, and greasing- - ,with bu ter- to prevent cracking, etc.,' till we I cured, com pletes the process. S me, to give a yellow "casit to the chee e, add, when - they put7fn the rennet,4natto ; but ,I would advise not. Fixposing the ..'- - curd equally to the air, Lwhen cut be fore pressing, for a short time, will f give it a natural rich color without the dye stuff. It is needless to add that cleanliness in every particular & from the - milking of the cowki to the completion of the process,is essential to making good cheese. In regard to these he says _ mankind generally evince a most se ' rious want of knowledge---a want" which entails serious losses. Many \places dignified by the,n'ame of stable k arosinks of filth and rottenness loca ted in some low, dark, damp alley with little room less light, nearly void of air and surrounded with „mounds of reeking filth. What the horse especially wants to secure a perfect avelopment of his powers is cleanliness, exercise,warmth,light, light, and pure air.
