Dairy Boonamgy
Within a few years a very benefic
ial change has_ been going on in the
dairy economy of: our New England
and Northern farmers. - Instead of,
as formerly, each farmer converting
a' portion or the whole of his milk
into cheese,'as conVenience or inter
est dictated, the mannfacture of that
domestics luxury is tryr in-many dig;
triets transferred fio9 the farm house
to factoriefe established" for the epee« ,
purpose. To ;these -the farmer
sells whatever, milk he has to spare,
and it Is worked upinto cheese.—'—
Vast quantities of. milk are now an
ntfally disposed of in this way, the
operation proving advantageotis both
to the farmer and manufacturer, The
farmer pockets the cash - for his milk
at once, malls wife is . relieved 'of
much hard labor. The manufacturer
at the same time gets the material
for a profitable business. To. the
community at large the chauge 104
been very advantageous. The'cheese
manufacturer, by meanfr i ,of extensive
apparatns,the use of large quantities
of milk and the application of scieth
tifie principles to thesbusiness,is able
to produce a much better article of
cheese, on' the average, than the far•
mer himself can. This is so gener
ally the case that factory cheese
brings a higher price in the market
than .the homemade article. The
benefit to the public hi that the quan
tity of poor cheese offered for gale is
reduced and the supply of good in
creased. There is less waste of the
raw material than formerly.
The superiority of making cheese
iu this way having been demonstra
ted, why may not the system be ex
tended to butter, and butter as well
as cheese factories be established
That there is need of a reform in the
present loose way of making buttei;
every purchaser of the article, hall
abundant evidende. At some sea
sons it is almost impostlible'td obtain
good butter, 'even at a high price,an.
vet at the same time the market may
be flooded with poor stuff, fit only for
soap grease. qo few country people
understand how to make butter and
so prepare it for• market as to have it
tarn its good qualities, that im
ense quantities are annually was
, o .:ted. This involves not only a serious
' 4 : - loss 'to producers and dealers, but to
consumers, who aro obliged to eat an
inferior article, pay an exorbitant
price for a good one; 'or go without.
There seems to be no good reason
why butter may not be manufactured
on a large scale as well as cheese,
and a ranch better article pioduced
than is now' turned out from mo,t
dairies. Improved methods have
been applied, to almost every farm in
dustry but•ttlis, and the march of im
provement shotdd not stop short at
the butter' chain. Adopt a system
for making butter similar to that now
.so successfully - pursued for making
I.liee6e, and we should at once wit
ness.a great change for the better—
quicker and Ewer returns for the far
mer, a much larger supply of supe
'• rior butter for consumers.— Boston

RFLES FOR FAR3rERS.---1. The farmer
ought to rise early, to see that others
do so, anrl that both his example be
followed and his'orders obeyed.
2 2. The whole farm should be reg
ularly inspected,'and not only every
11,1 d ex smined, but every ' helmet emu
at least once a day.
3. In a considerable farm it is of
the utmost consequence to ,have l
hands specially appropriated fori‘eachl
of the most important departments of
labor, fur there is often a great loss
of time where persons are frequently
changing their employments, and the
work is not executed so well.
•
4. Every means should be thought
of to diminish labor or to increase its
power. For instance, by proper ar
rangement, five 'horses may do as
much labor as six perform, according
to the usuode of employing them.
5. A far m-ought never to engage
in a work, whether of ordinary prac
tce•or intended improvement, except
after the most careful inquiries ; but
when begun, he ought to proceed in
it with much attention and persever
ence until holies given it a fair trial.

ment not to attempt too much, and'
never to begin a work without prob
ability of being able to finish it in due
season.
7. Every farmer should have a book
for .inserting'all those useful hints
which are so constantly occurriL,ig'in
conversation, in books, in papers and
gathered in course of his reading
or in a practical management of his

SWELLED LEGS IN ROBSEEL—Many
horses are subject to swelled legs.—
In old horses it arises from conges
tion of the legs, which depends on
the weakened action of the heart inci
dent to old age. There is not much
,to be done for cases of this descrip
ties. Another class of cases occurs
in horses of a lympathic temperament
and the exciting causes are high feed
ing and want of exercise . The horse's
leg becomes swollen, hot and painful,
and the horse goes lame on the affec
ted limb. Tile proper treatment for
such: cases is low diet and laxative
medidine. In severe ' oases I have
-sometimes scarified the affected leg,
but this is only advisable in the early
and acute stage of the attack. Half
an ounce of nitre of potash
,may be
given once a fortnight to horses that
are subject to 'swelled legs, and
where it recurs frequently; once a
week. 'The swollen leg sometimes
attains enormous dimensions, and the
swelling may become permanent. I
have seen a horse's leg swollen near.
ly -as thick "as a man's body, and in
one case which I examined after
death from a different malady,l found
that the swelling was pioduced by
the effusion of lymph between_ the
skin and subjacent tissues.—Dr.Mur
