Preparing Poultry for Market.
An almost every farmer has more or less
poultry to sell, aud mauy have euougli to
warrant them in preparing and sending it
to market for themselves, a few hints on
the of prepariug poultry for market,
may not be amiss. The increased price of
iiiC'-, well picked nud fattened poultry ;
nver lean,or torn and pin-feathery "critters,"
richly repays the extra trouble required to
put them in good order.
The dung-hill fowls or turkeys, or what
ever kind of poultry is on hand, should not
be fed for 12 hours previous to killing, as a
bird with au empty crop will go in better
order than one stuffed with corn just before
killing, and the increased price of the one
will amount to more than the increased
weight of the other.
They may be killed by cutting tiie vein
across the roof of the mouth, and hanging
them by the legs until done bleeding. Some
make a practice of striking them a heavy
blow on the head, before they are done
bleeding, so as to retain the blood aud
weigh more, but it is au unprofitable prac
tice.
After killing, the next thing is scalding
and picking the feathers. None should be
soahied until the moment of picking, and
the water for scaldiug should not be too
hot, nor too cool, but "just right." Expert
ence is the rule to tell when it is just right.
The picking Bhould be done with care, re
moving the wing and tail feathers first,
while the bird is hot aud they pull easy. —
Pick clean. Every feather from the knees
to the head should be removed, —not one re
main. (Jure should bo taken not to tear the
skin. If properly scalded there will be lit
tle danger with the greater part ; some,
however, will tear, be you ever so careful, j
All blood and dirt on the skin should be ta-!
ken off, so that the bird be clean, and then
it should be held a few seconds in boiling
water. Tin's will not injure it, but rattier
benefit, by hardening the skin and giving
it a better color.
Some remove the heads before packing ;
but I am doubtful if the poultry will com
mand a higher price after so doing, if the
Indies are in good order. The practice
wittf us is to pack with head and legs still
attached.
They should not be packed until through
ly cooled ; and it is advisable to let them
lie one night after picking, for this purpose.
Then they should lie packed in a clean box
with clean straw between them and the
bottom and sides of the box. Laying them
on their breasts in packing is the best posi
tion. After filling the box, cover with straw
and nail on the cover, and the box is ready
for shipping or "railroading," as the case
may he.
With respect to time of sending to mar
ket, it is well to keep posted on the prices,
and then choose as cool a day as possible
for sending in, if the price is satisfactory.
A cool day is best, because the poultry will
bear exposure in market better than on a
warm day.
As a general rule, it is more profitable to
keep poultry over winter, and fatten and
market in the spring. Corn will bring a
better price when fed to poultry and con
verted into meat, than in any other form,
and the fatter the bird is made by good
feeding, tie more profit there will be in pro
ducing poultry for markets. JERSEY. _

Heavy Farm Implements-
Now if the error was confined wholly to
the use of heavy implements, handled by
the man himself, then he alone could suffer
by a useless outlay of strength ; but it is
not so, because as a general thing, farm
carts and wagons are much too heavy.—
Most of them are of sufficient weight to hold
up thrice the burden that any common team
should draw. MaLy horses and oxen are
injured annually by this defect ; for it is
apt to be the case, that farmers are govern
ed more by what their wagon will bold up,
when putting on a load, than they are by
what their teams should be allowed to draw.
There are, of course, cases in which it is
necessary to have a heavy cart or wagon,
wlieu large loads are to be drawn by very
heavy, or double teams ; but in no cases in
it necessary to have a cart-tongue so bun
gled and heavy that one man is hardly able
to lift it into the yoke ring.
It is our opinion, that more labor can be
performed on a farm in a day with a light
wagon. And the drawing of light and fro
quent loads, than can be done with a heavy
wagon aud the drawing of large loads, and
there is certainly much less outlay of mus
cular power by both man and beast. —
Wherever a man is found that daily exerts
the strength of his team to the uttermost,is
surely to be found one that is constantly
perplexed with breakages, and the owner
of a jaded team. Farmers, use light tools
yourselves,and provide for your teams light
and durable vehicles ; there will be less
wear and tear, aud more accomplished.
Making Stock Oomfortoble,
it is for the interest of every farmer to
sec that his stock are comfortably provided
for, which consists not merely in housing
and feeding them well, as this may he well
and faithfully done, and still an animal
may be uncomfortable—tor want of pure
water, sufficient air, proper cleanliness, Ac.,
all of which conditions are essential to its
well being. No matter how slight the in
convenience, or neglect may seem, so long
as an animal is made uncomfortable, it will
not thrive as well, nor be as well fitted to
labor, nor in the milch cows, be as
productive in milk, as would be the case,
where the cause or causes of discomfort re
moved. To realize the most profit from
keeping stock, every condition necessary to
their comfort should be secured and main
tained. An animal poorly housed, if ever
so well fed, will fail to give a satisfactory
return in growth aud flesh for the amount
of food consumed.
Stock should be oonifortably provided for,
as a matter of economy, setting aside every
Other consideration. When animals are
supplied with an abundance of the best
quality of bay aud grain, the bad effects
arising from neglect in other particulars,
will not be as easily perceived, as when in
connection with the same neglect, they are
poorly fed, although there is a loss to the
owner in the first instance often-times, from
the excess of food consumed, which under
different management might have been
saved ; but when the fodder on hand is
either deficient in quantity or inferior in
quality, as it often is, the utmost care and
judgment need to be exercised in feeding,to
maintain stock in good condition, and to
make them a source of profit. Variety in
feeding should always be carried out as
much as possible, as anything calculatedto i
create, and increase a relish for food will
keep the animal in good condition. The
food, therefore, should be changed as occa
sion requires, and roots and grain fed alter-1
nately with hay, stalks and straw ; and it
has been found, by experience, that where
the appetite is thus excited and kept up,
stock can be as well and profitably kept on
less and poorer food, as where, without the
variety, more and better food is given.
