potatoes, beds and carrots, may be given to
them with any sort of grain meal you happen

We do not believe in confining poultry at
this season of tin-year. When winter sets in,
and heavy storms come on, it will do, provid
ed they be kept clean, and have plenty of good
air, and wholesome food. If they have the
habit of roosting ou trees—which they often
times get in warm weather, and which is very
wholesome for tln-tn—tliey should now come
under shelter It docs no good, but positive
injury for a turkey, or chicken to get wet in a
cold rain and they should not be exposed to it
In addition to generous feeding now promoting
their growth, it shoots out their second growth
of feathers to maturity—for no old bird is
good to eat while moulting, or a young one
palatable while pushing out its secoint grow 11:
of feathers, which all young ones do in the fall

chicken cocks get their full plumage, crow

The geese and ducks, it you have not picked
them to death, through the summer, are now
in full feather, plump noisy am! quarrelsome
Give thein boiled vegetables of any kind you
have to spare, and some mea! mixed with it.—
Occasionally a little grain, and with their ac
customed water exercise, they will go on re
joicing. Keep the dirty, waddling ducks out
of filth, if possible—they are filthy tilings, il
they can get at filthy food—for it is sure to
make filthy flesh A dean fed duck is delicious
food—otherwise it is little better than minor.
A goose is usually a clean feeder, and no flesh
is better or nutritious than a fat gosling.—
" Roast-goose ami apple sauce," is a gour
mand's dish, the world over ; but it must be
clean fed goose and a good variety of apples to
to make them of, or they are worthless.
IIAM* A Gcon PlCKl.K.—Having recently
tried, proved and approved the excellent quali
ty of a human obtained of llnight and Emeu--,
226 Front-street, in this city, we solicited from
them the best directions for pickling hams, and
they have consented *o give their method to
the readers of the Agriculturist , though the
process lias hitherto been a prirurp mutter.
For 100 lbs. of II ms —Pack the n in a bar
rel or ca.-k, and pour n water enough to cover
them. Pour off the water, and add good rock
or Turk's Ishnid salt, enough to iimkc a brine
that will just float potatoes. Two or three
kinds of potatoes should be dropped in, as
some varieties are much heavier (of grcnti r
specific gravity) than others ; about the aver
age weight is dc-iruble. To the brine for the
hundred pounds thus pr u pared, add tine pint
of good molasses, and six to seven ounces of
salpctrc, using the large clear crystals, as being
the purest. Muk and use the pickle cold.
Then pour the liquid back upon the hams,
and let them stnna <ix weeks, when tliey will
be ready for smoking, though tliey may stand
ns mn<-h longer as may be desired, as they will
in the first six we -ks tak - up till the salt tli it
they absorb. When removed finally for siuok
itig, they should i>e thrown into fresh water,
uii t stand 24 hours.
Take notice, that the position of the hams
in the barrel should be changed once in 10 or
12 days, to let tliein lie upon each other at
new points, ami allow the brine to come in
contact with the parts which had previously
lain together. Tliis is an important hint in
pickling hams, whatever kind of pickle may be
used.
IIAUS are preserved from attacks of the fly,
and their quality uninjured, by throwing red
pepper ou the bee in the sinoke-bouee at the
clow ol the ppertvuon.
