Feeding and Culture of Carrots,
I Lave wintered swine almost entirely upon
c:im>ts, fed raw. They not only grew bat
fattened upon them. For this purpose, how
ever, 1 would advise to cook them.
I prefer theni to any other root (not except
ing beets, for feeding cows that are milked

u few days before she was butchered. She
was quite thin when I commenced feeding, yet
fifty bushels of carrots made her l'ut enough to
yield ninety-six pounds of "rough tallow."—

übout the lfth of October, and fed a bushel
a day until the fifty bushels were consumed.—
Call any Of the readers of the Country Cirut le
nt uit tell me of a cheaper way to make good
beef than the above? If so, I should be glad
to hear from thein.
Horses also thrive well upon carrots. I be
lieve it is generally conceded bytho.se who have
tried it to be ahead of any other root for this
"most noble animal." In fact it is the root
fur the horse. Try it, brother farmers. Feed
your horses less grain and mole carrots, and if
J hoy have not smoother coats and few er coughs
than that neighbor of yours who "stuffs" his
with dry hay mid grain, then resume your old
practice and call me a know-nothing.
I consider the "Long Orange" far the best
as u standard sort for general cultivation.—
The White Belgian has been recommended by
s-ume as the ocst, on account of its being more
easily harvested, as it generally grows nearly
one ih rd of its length above ground. From
what experience 1 have had with them, I think
the difference in the labor of harvesting is not
as great as the difference iu the carrots. The
White Belgian is far less nutritious than
the deeper-colored varieties, and never keens
a* w ell.
I lately received a package of carrot seed
from Germany, that was lakelet! "Early Dutch
Horn Carrot." It proves to lie a verv eafiv
variety, and it is the best for table use of any
kind I ever cultivated. It is finegrained, and
has a peculiar rich and agreeable flavor ; t<#>,
small ; color, deep orange—short— tap-root
terminating abruptly. The latter qualification
fits them admirably for thin or stony soil, as it
facilitates the labor of harvesting. The car
rot delight in deep, rich, mellow soil. There

ploughed to deep, or made too rich. 1 ow in
drills eighteen inches apart. They should not
stand too thick. An inch or an in h and a half
apirt is about the right distance.
1 generally sow from the loth of May to the
first of June, and harvest at the rate of 1,000
bushels per acre. Carrot seed should be cov
ered about one-third of an inch deep, and the
earth firmly pressed about it The neglect of
the latter precaution has been the means of
losing many valuable crops. In sandy soil it
should be covered deeper. The heaviest crop
I ever raised was on a piece of land that was
used as a barn yard during tlie winter preced
ing. The greater portion of the manure was
drawn ofi and the land plough d and sowed the
first of June. The ground and carrots were
measured at the t'iu> of harvesting, and found
to yield at the enormous rate of J.find bushels

erson county, exhibited at last New York Stale
Fair at Watertown some samples of very fine
butter, made by a process which he describes
as follows :
"The sample of bufter is made bv my im
proved method, whereby every drop of water
or buttermilk is taken out of it by solar evap
oration. In this process I claim to have so
perfected butter making that butter may be
kept sweet for several years, without the ran
cid odor caused by tlie decomposition of water
and buttermilk that pervades most of the but
ter at the present time.
" The following is an outline of my improv
ed process : Firstly, in churning the cream,
enough ice should ho put into it occasionally
to make the butter come in crumbs ; pour oif
the buttermilk, aud wash the butter several
times in soft iec water until there ceases to be
any milky appearance. During the process of
washing, should there be a solid lump of but
ter largo enough to coutaiu a cell of fluid, that
lump should be crushed while in the water,
and broken into a corresponding size with the
other crumbs. Lastly, wash it in brine made
of rock salt, saltpetre, soft water and ice ; skim
the crumbs out of the brine with a skimmer ;
drain each skimmer-full well, and spread the
crumbs of butter on zinc plates (in cold weath
er wooden tables will do instead.) In very
warm weather the zinc plates should be set on
ice water. While the crumbs are spread out
thinly, place the butter in the middle of a
milk room ; open all the windows, and a cur
rent of air passing over it. will evaporate all
the moisture in warm weather, if the room is
suitably ventilated.
"Care should be taken not to have any oth
er moisture in t lie room, like water on the floor,
or wet dairy furniture in the room. When the
butter is perfectly dry, pack it down immcdi
atjly ; let there be no more working of it than
is necessary to pack it solid in ajar or tub.—
This will secure unbroken the crystals of but
ter ami its original flavor. As near as I can
ascertain, there will not exceed one ounce of
salt to ten pounds of butter by the process of
brine salting. As a general thing, in making
for hospitals, gouty invalids and sick persons,
the salting process should be omitted altogeth
er. Kntter made in this way, (without salt,)
if sealed in cans or jars and placed in an at
mosphere or chamber of binoxide of nitrogen,
I believe will keep any practical number of
years."
Apple Jelly. — 2o golden pippins ; sugar ; 1
lemon.
Peel and core the apples, put into a pre-
Fcrving-kettle with one pint aud a half of wa
ter, stew until tender ; then strain the liquor
through a calender. To every pint, put a
pound of fine sugar, add grated orange or lem
on, then boil to a jelly.
A.wrm-a—Prepare the apples as above ;
have ready half an ounce of isinglass boiled in
half a pint of water to a jelly. Put this to the
ripple water, and apple as strained through a
course sieve ; add sugar, a litttle lemon juice
and {teel. IJoil up all together aud put into a
dish. Take out the peel.
