Citizen How popular this Banner Bak

LATEIt ICE CEEAJI CAKE.
Two cups cranulated sugar, three-fourths
cup butter, beat to a light cream, then add
one cup cornstarch which has been stirred
into one cup tepid sweet milk; beat this all
together, adding one teaspoonful extract
vanilla. Stir into this the well-beaten
whites of seven eggs and two heaping cups
of floor, having thoroughly mixed through
the dry flour one and a half measures 'Ban
ner" Baking Powder. Bake in three
layers.
Icing: Take two and a half cups granu
lated sugar, half cup water; boil three min
utes; when cool add the whites of three
eggs slightly beaten, and one teaspoonful
extract vanilla.
CHAELOTTE BT7SSE.
Take 1 quart rich cream, 4 tablespoonfuls
powdered sugar, 2 teaspoonfuls extract of
vanilla; place this .in a vessel packed with
chopped ice; allow it to thoroughly chill.
Then beat into this 2 teaspoonfuls gelatine
that has been dissolved in 2 tablespoonfuls
sweet milk. Prepare your cake as follows:
Take the whites of 11 "eggs beaten stiff, 1J
teacupfnls granulated sugar, measured after
sifting; beat the sugar in gradually, also
the yolks of 6 eggs and 1 teaspoonful ex
tract of orange; stir into this 1 teacupful of
flour, measured after sifting 4 times,
having mixed through the drv flour 1 meas
ure "Banner Baking Powder." Bake 40
minutes, slow oven, square pan. "When
cake is cold, cut out the center and pour in
the whipped cream; drop over top candied
cherries or other conserves.

to-day is a point of convergence for all lines
of human experience in material things. In
view, indeed, of the "World's Congress of
Students now in session, it may almost bo
said that all lines of thought center here as
well. However, the deliberations of that
body are doubtless rather amateur to confer
the latter distinction upon the city. But in
material things, all ages and conditions of
man and man's doings are represented.
From the rude constructions of the stone
age to the Tower Eiffel, the steps of man's
ingenuity may be traced. The student of
ethnology, too, will find abundant matter for
observation; all nations are represented, all
tonsucsare spoken, and all costumes are In
stjle Paris style, too.

The turbaued Turk: and the lithe Egyntlan,
the florid Englishman and the inquisitive
American, the slant-eyed Oriental, the whisk
ered Russian and the "Yah vohl!" Dutchman
jostle each other in the crowded streets, and all
make the same ludicrous attempts to inter
change ideas with the voluble little Frenchman.
A vast concourse ot people, truly, but the great
city is abundantly able to provide for them.
The rumors that float over to the States, with
regard to the overcrowding of Paris and the in
ability of visitors to procure accommodations
of any kind, are grossly exaggerated.
We came here a week ago, without pre
arracgeroents, and bad no difficulty in securing
ood accommodations: not luxurious, perhaps,
ut eminently comfortable, and that at no such
exorbitant prices as are commonly reported.
Another favorite myth of American corres
pondents is the extortion practiced by cab
drivers. It is all nonsense; pay a driver the
regular fare, and a little pouboir, and with a
"ilercl. Monsieur" and a smile, he is off. and
your ride has cost you, even though it Is Paris
and Exposition season, less than half what you
would pay for the same service in Pittsburg
any day in the year.
BATHER LARGE.
As to the Exposition itself, it is big. Not
having seen a great number of such shows I
can't compare it with its predecessors, but to
my inexperienced eye, it is big. In fact tuis
bigness is about the only distinct impression
that a first day's ramble through it leaves on
one's mind, and when you are sure you have
been through it all, you haven't? but for days
in your maneuvcrings about;the city you will
come across patches of the Exposition in all
sorts nf unexpected daces.

The great central enclosure on the Champs
de Mars has as many branches as a crab has
legs, and these are all connected by railway
with the main body. There's a vast deal of in
formation stored up in this Exposition, but the
only way to get it is to follow Holmes' recom
mendation with regard to the British Museum:
"Go and engaee a house in the next square and
spend the rest of j our life studying it."
Americans are not given to dressing. in red,
white and blue when they visit tbe Exposition.
Little Nicaragua makes about as good jl show-in--
as the United States, and the exhibits from
several countries whose names are mainly as
sociated with the study of geography, compare
very favorably.
Even tbe American who is patriotic enough
to allow tbe corner of a Fourth of July hand
kerchief protrude from his breast pocket stuffs
it in when he comes to the railroad exhibit, tor
here, drawn up beside magnificent trains from
English and continental roads, he sees, reprc
sentinz "this great and glorious Republic"
(cesture). a quarter section of a Pennsylvania
Railroad freight car and an oblong chunk from
tbe side of a Pullman sleeper. In looking at
them one finas bimelf wishing for a New YorK
and Chicago limited vestibulo train, and refer
ring to tbe Golden Gate train, an American in
the party was beard to say, "Wouldn't that
knock 'em sillyl"
TAJTKEE VISITORS.
Speaking of Americans, yon onght to see the
citizens who come over here. Lowell says
somewhere that there are no people in the
world who dire so deep in the sea of European
reminiscence and come up so dry as the Ameri
cans, and a very few weeks on this side of the
Atlantic will amply verify the statement. You
will find them in the peat bogs of 'Ireland (tak
ing a piece home, you know, to put on tbe man
tel), among the lakes and bills of Scotland,
everywhere in England, and all over the conti
nent. And it will surprise you to notice the
kinds of peopla who come over. They are all
here: and you wonder why they have come.

collar, and little rills of dandruff running down
all the wrinkles; the lank-cheeked man whose
entire time is spent "catchin" trains." and who
shouts sharplv to his wife, "Git in here, Marv,
qnickl don't you know how close we come to

the benignant old lady who announces that
Paris is "chuck full of history; she hadn't any
idea there was so much history here, but knows
where she can find out all about it, and intends
to read it all up when she gets home." There
are whole squadrons of fair school teachers,
ear-er. vearninc cirls who Co abont with note
bonks and le.d pencils.
Tbe stlngv man is here who imagines that all
the crowned heads of Europe, and a few of tbe
republics, are leagued together "to skin him
out of his money;" and the real American who
looks at the (Swiss lakes and declares that they
"can't bold a candle to Lake Georce." And so

acters more or less obnoxious. 1 most relate
just one conversation, even at the risk of being
accused of purloining from Mark Twain. It
was out at tli Palace of Versailles the other day

But to return to the Exposition, and the
American exhibit, the only uart of thn latter

very curious to watch the expressions of people
to whom the idea is entirely new, as they hear
their own voices reproduced. All shades of
feeling, from consternation to the keenest en
joyment, may be noted.
THE ORIENTAL EXHIBIT.
To me the most interesting stroll in the exhi
bition is down through tbe Oriental quarter,
where there is such diversity of face and cos
tume, as well as tongue. As you listen to this
jargon and walk through the shadow of the
great tower you involuntarily exclaim, "A
modern Babel!" But go out into the streets of
tbe city, pick your way through the Boulevard
des Italiens, at anytime except from 4 to S A. m.,
and your thought will be, "A modern Babylon."
"Eat, drink and be merry" is the principle on
which tbe Parisians seem to act, and from early
In tbe morning until early in tbe morning the
cafes, and the streets in front of them, are
crowded witn people, wno sn mere ny the hour
and cat and drink, and smoke and talk, and
read and loaf.
A few of us, a night or two ago, undertook to
find out. If possible, when this congregation
would disperse; but at 2 o'clock we gave it up.
There were still crowds of people on the street,
and we were told that many of them were good
for two hours more. To see a marl leisurely
perusing bis evening paper on the Street at 2
a. M. would be a novel sight at home, but here
it is common.
The words "Modern Babylon" suggest the
Shah. He leaves this afternoon for Vienna.
Of course The Dispatch knew all about his
visit here and in England, and have possibly
thought of lorae significance in the exceedingly
friendly recention tendered him br both Kn.
gland and Russia.
I saw him the other night at the Hippo
drome. They have a performing lion down
there now as tbe drawing card which rides a
horse, jumps through a hoop and occasionally
chews up a mastiff or performs some other
playful freak for the amusement ot the specta-
tors. On this evening, though, it was plain to
be seen, by following the direction in which tbe
opera glasses pointed, that tbe

of the occasion. Tbe "King of Kings" himself
seemed to bo most interested in tbe perform
ances of two comely damsels on the horizontal
bar. Seriously, though, he is a very dignified,
self-contained looking man, and reported tote
the best ruler Persia has had in many decades.
This is not his first visit to Paris. In the early
seventies be was the first crowned bead to pay
a visit to the "Third Republic," and at that
time his reception was even warmer (?) than
now. -
It was the year of the famine in Persia, and
the Paris mob took after him. called him a
robber and advised him to sell the diamonds
from his horse's tail and send the money borne
to his people to buy bread. Paris mobs just at
that time, too, were in good practice, and his
Sbahshlp was fortunate in living to pay France
a second vistt.
On the whole, contrary to current report at
home, 'S9 is a good year to visit Paris.
