Sift tormix nnd then rub into the flour two -thirds cup of shortening and mix to n dough with two -thirds cup of ice cold water. Roll nud cut in five-inch squares. Pare the peaches, but do not out or remove the stones. Place the peach in the center of the pastry squares, and brush the edges of the pas try with cold water. Now dust the peaches lightly with cinnamon and sprinkle one level tablespoon of sugar over the peach and fold the pastrv, pinching the edges tightly. Now lift to the baking pan nnd brush with beaten egg nnd milk. Bake in a slow oven for thirty-rlvo minutes. Baste every live minutes with Tteo-thirds cup of sirup.
