fuls fat, 2 tomatoes, 1 largo potato, t

Wash and soak the beans for twenty
four hours In woft water. Simmer for
about two Iiouik with a large meat bone
If you have one. Peel and finely chop
the onion, slice the tomatoes, scrub and
grato the potatoes. Met. the fat In a
smaJI saucepan or casserole, fry the
onion In this until' nicely browned, then
add the sliced tomatoes, fry for a. few
minutes, add the potato and one cup of
the stock from beans; let simmer for
about twenty minutes, then strain the
sauce.
Drain the beans well (salng the
liquid for soup), mix them with the
hauce and put Into a lireproof dish and
bake fifteen or twenty minutes. A little
grated cheese sprinkled oer the top Is
a great Improvement,

Oife sheep'o heart, large: 2 tablcsroon
fuls small sago or tapioca: vegetables,
such as carrots, turnips, onions and a
few outside leaves of celery or artichokes
or sprout tops, or both ; 1 parsnip, 4 po
tatoes, l'i pints of water.
Soak the sago or tapioca In a cup of
cold water, scrub and prepare vege
tables. The artichokes should be well
washed, scrubbed and scraped under
cold water, and then sliced or cut Into
quarters; the parsnips prepared In the
same way as carrots. The potatoeu
