liberty of i-rltlc,zlng this critic on one or
two Important statements; and do so purely
for the purpose of setting this much
maligned and now positively necessary

Your correspondent says that oleomar
garine "Is only colored so (hut It can he
mistaken for butter." and Is never naturally
jellow. This Is wrong. Oleoma rgarl tie as
we know it In this State can only be sold
white, nlilte as the driven snow. The prin
cipal Ingredients of (his product are the
bu(ter fat of cattle and milk, and the result
of this combination would of Itself yield n
product with a decided yellow tint. Hut
the legislators of one or (wo States of the
Union, of whlcji Pennsylvania Is one, hav
ing denied (he right of the publlo to buy It
In (his guise, demand (hat it be made and
sold pure white, l'or this purpose, science
has been able to overcome the dllUoulty by
special process and (he use of certain vege
table oils or other harmless Ingredients.
Let mo lay this fac( before all fair
minded readers, particularly your corre
spondent: Creamery butter Is colored with
a certain coloring matter during the greater
part of the year, and It Is this self-same
dye which when put Into oleomargarine
raises the revenue tax on same from one
fourth cent to ten cants per pound. No
greater proportion is necessary. If there
Is any Injury In Its use In oleomargarine
why, does creamery butter escape? To give
this answer we must dig deep Into the po
litical past, which Is not my purpose in this
article.
It Is a sad fact that the prite of creamery
butter is presently at such a prohibitive
figure that the average working man can
not buy It) and I am not denying to the
creamery trade the necessity for its being
at (hut high figure; but I say that la fair
ness to the great army of consumers all
means should be adopted for having the
real truth about oleomargarine brought to
light and all legislation should be directed
with the view of having any unnecessary
taxes and restrictions removed. There Is a
State tax of $10" per annum and a rev
enue tax of $6 per annum on the dealer,
before he can sell even one pound of pure

jority of our creamery butter by tracing

dairy vessels or crocks nnd tho churns to
