When brown on ono side, turn nnd brown on the other. Have broiler close to the flame, and leave broiler oven door open when broiling. CUBAN SAUCE Two tnblespoonfuls finely chopped ham, U cup flour, 4 cup butter, H4 cups stock, 1 cup tomato ket chup, Vi teaspoon salt. Cook ham and butter until butter Is well browned, add flour and salt, the stock slowly and then tho ketchup. Cook 10 minutes. Strain and servo with broiled mutton chops. POTATO SOUFFLE Six potatoes. 1 tablespoonful butter, pint milk, 1 tea spoonful salt, 1 saltspoon of pepper. whites of four eggs, 3 tablespoons Tar mesan cheese. Steam or boll the potatoes; when dono mnsh quickly.
