la Shakespeare's day the usual fare of
country gentlemen was " lour, five and six
dishes when they have but small resort."
Dinner was aerved at eleven In the morning,
upper at six, but was generally protracted te
a late hour, and there was always the pesset,
also net Infrequently buttered ale, Bristel
milk, and lamb's wool. Fer the pesset, as
used In ancient times : Deal up well the yelk
of eight eggs with retlned pulverized augar

of the rind of a lemon by rubbing sugar
lumps en Hand put the sugar with a piece
Of cinnamon and a bottle of wine in a sauce

H beUs then add a single glass et cold white
wine, put the liquor into s spouted jug, and
pour it gradually among the yelks or eggs.
Keep stirring well while the Hquid Is pour.
Ing In. If it be net sweet enough add sugar ;
and, lastly, pour the mixture as swiftly as
possible from one vessel te another until it
yields a fine Iretb. Observe, It the wine be
poured boiling het among the eggs, the mix
ture will curdle and the pesset be spoiled.
The beverage must be drunk het.
Lamb's wool was made et roasted apples,
bruited and mixed in ale, nutmeg, milk or
wine. On the ltt ei November, it was an
ancient Celtic practice te Indulge lu a feast
called La Mas Ubbal, the day of the apple
fruit lirlstel milk was milk punch. Hut
tared ale was composed of sugar, cinnamon,
butterand beer brewed without hops. Ale
was universally popular with all classes.
Kegardlng the subject el wines, American
home-made wines may be added te the wine
cellar wiiheutatall being regarded as plebeian
by their feregn neighbors. The fenr requisites
for fermentation are augar, malic acid, vege
table extract and water. Fer a sweet wine
the cork should net be closed until the sound
of fermentation has nearly ceased. If a dry

has been subjected te the fumes of sulphur;

Te make excellent neyau : Te one ounce of
large apricot kernels add one pound et leaf

weeks, shaking it every day ; then let It settle
aad filter it until tine. Noyau should be
made entirely et peach, apricot, ncctarinn nr
plum stone kernels. If almonds are usud the
naver is net se une.
There Is a variety ei drinks which could be
Blade at a moderate expense infinitely better
than peer or intoxicating wines and llouers :
for Instance, cold punch made in this way :
Peal six lemons free from pith, cut them up
la small pieces and put them In a bottle with
two cloves, half a pint of het water, aud

Ttis Frnctn.n YTtinse Departure Frem the
Catholic rhnrch Canted a Stniatten.
Much public tutcrcst has ever been evinced
In Pere liyaclnthe and the Urst severauce of
his connection with the Ketrmn Catholic
church In the early spring ei ISiT will be an
event which wltLxtlngulsu the last Catholic
adherence he mity still have entertained.
All preparatory arrangements are being com
pleted for bis appcaranca in we puipit et me
Episcopal church. A literary light of aome
prominence writing from Paris at one time,
alter having seen and heard liyaclnthe, says
"he is a grand orator artist, having been
brought up lit n great oratorical school, of
which he and Emile Olllvler were the fore fere fore
tnett repreentatlves, and If I were of his faith
and belief 1 should say of his style, "Cost la
splendeur ilu vraU " Pere Hyrclnthe is
possessed of a singularly flne head and the
profile is one that would leek best repeated
en a medallion. Pere Hyaclntne (Charlei
Loysen) was bera at Orleans tn 1527 ;
alter pursuing his course of studies lu the
college of Pan, he Qg4ered the collrge of St.
Sulplce. Four years alternranls he was
ordained a priest and became alre professor
of theology in several schools, devoting his
whele time and attention te his life work
thus set before him. Subsequently rather
Uyaeinthe was attached as a working priest
f) the parish or St. Sulplce In Paris, but he
seen tnade himself a monk and entered the
convent ei the Carmelites lu Lyens. Frem
the years Including the dates of 1551 until
1SG9 he was the most celebrated preacher ever
hard at Uerdeaux Nantes and in the 'etre
Dime, et Paris, lie was suspected of enter
taining and tutoring tee liberal religious doc
trines and finally became- excrmmunlcated
from the priesthood by the pope, l'ather
Uyacintbe seen after this (In 1579) made a
voyage te the United States, and en his re
turn te France married an American lady.
Persecution compelled him te seek refuge In
Switzerlandfera time, when he established
an Old Catholle church at Geneva, and it
was stated that although deprived of the
right te celebrate the ceremonies of Catholic
worship, he was pertnitfed te assist several
times In the services of Ae Galilean church.
Liberal priests and hlsfKats authorized him
se te de ; they recognizing that his aim was
net te destroy, but te alelerm the Catholic
church. 1'ere "-ir' MsaY if is mTk-.

ordinary conversational eloquence, and, as
his wife says, the wings of hLs soul are se
little draggled that he can sear up Inte the
