Last Mgbt at the Opera Heme.
It is no wonder that the audience which
gathered in Fulton opera house last evening
was very small, for the weather was beastly
het, and these who did sit the performance
out were obliged te endure considerable
punishment from the heat. Seme of the boys
en the gallery were compelled te shed their
coats, but still the perspiration that poured
off of them would have answered te sprinkle
the streets. The attraction was the lour-act
melodrama, entitled "Bound te Succeed,"
which made a hit in England and has been
drawing largely at Nible's Garden in New
Yerk tills summer. This piece is of the sen
sational order, but It la a rather geed one and
will likely become popular. Mr. Parker's
company was strong thiougbeut, and it in
cluded Arthur Sprague as J-'iUcarcl lt:gcr
nld, the victim of a plot, A. C. Hendersen as
Jlebert Jtandall, Harry Mathews as Saudi
Slake, Miss Lettie Blair as Agnes Hastings,
and ethers. The company opens in Pitts

Fer a child under six years et age, the best

potatoes are uest roasted or baKeu. uggs
miv be nermitled. if fresh and elaln boiled
and rather soft. The proper way te cook
eegs for old or young Is te place tbem ever
the tire in cold water, and bring them te a
boil, allowing about ten uiltiuts ter this
process Then set back en the range the ves
sel containing tbem, and if tuny are wanted
soft, let them remain eue minute, and longer
ter dltlerent degrees of harduess. 11 v plung
ing them at once into het water, the albu
men is hardened and reudered Indigestible
while the yelk Is nearly raw.
It may eeem absurd te give a rule for bak
ing and beillug potatoes but the experience
of many will bearme out In the assertion
thata properly cooked potato is a rarety.
Fer baking let tbem be nf medium and
ttqual size; wash them thoroughly and put
Inte a quick eveu : as seen as they yield
readily te pressure, they aredene, and should
be eaten at once, if possible. Always serve
baked potatoes in an uncovered dish, or they
will be watery.
Fer boiling, pare etl one ring around the
potatoes, and it they are old, put tbem ou lu
cold water ; If new, in boiling , iu each case
with a tablespoonful of salt ter each quart et
water. When you can pierce them easily
with a lerk, drain etl all the w ater, cot er
tbem with a folded dry towel, aud set tbem
en the back or the range until wanted.
Chops should hae all the fat trimmed etl,
and be broiled, ever a clear, bright fire ;
when they are done, wiwu them, using a
little butter aud salt, and sere with baked
potatoes
A beeksteak should be cooked lu the same
way. A tender chicken makes a nice din
ner for children. Breil It, thu Inside being
turned te the tire tlrst, or lay It in a pan and
cook it in a quick even. Butter some toast,
Reason the chicken with salt, Uy it en the
toast, cover and place in the even ler tit e
