It ia a MMlng braneh of the business of these te apply at al! times these vegetables, whleh aa the winter advances command increas ing priees. They can aflerd, by the ex teat of the crops they raise, te provide citable buildings, or rather cellars, te keep these crops, and have a suffleient apply at all times te meet the market demand, and realize the high priees which are nasally commanded late in the win ter and early in the spring. Bat the sail growers of these vegetables, though many in number, cannot incur the ex pense of providing structures in wbieh te preserve these roots for their own use, and have, therefore, te shift the best way they ean in feeding out the roots te their limited herds of cattle. Heat and moisture are the two agents which, mere than ethers, are hurtful te vegetable roots in general. Keep them dry and as near the iteesiag point aa possible, without posi tively freezing. But, as a rule, we regard the keeping of these vegetables burled, or protected, eat of-doers, te be preferred te any ether method. Turnips of all kinds, celery. abbage, carrots, etc., by being carefully buried, net very deep yet sufficiently se te protect them from the rains and een- sequent freezing, will be longest preserved. Celery, cabbage, carrots, etc, an .net' injured by what may be called cry freezing ; in faet, we consider celery te ee eenentea by it. it must be under steed, however, that no roots should be buried in large bodies, because they will of themselves produce heat, and, as a mat ter of course, decay. Better te be placed fa small heaps, or in rows or ridges, cover ed with straw or oernfodder, with aper tures leading te the body or them, stuffed with straw, wbieh will' admit of evapora tion and naturally of the escape of the heated, or mere properly of the impure, air. We have, found however, by repeated totals that by covering these bodies of vegetables with beards, se placed as te ahed the water, and the whole en an In clined surface thus preserviug the vege tables In a dry condition, they will be protected against decaying better than in aay ether way. We have kept celery and eabbage te the end of April in a geed state. On some farms the cellars underneath dwellings, which are generally the extent of the building, are used for this purpose ; but we de net recommend them. Frem the warmth of cellars vegetables will seen decay, and very frequently produce Berieus illness aa well as causing an effecsive odor. It would de no harm, however, te deposit there a small quantity of some of these vegetables for immediate ube in the early part of the winter ; but all else should be placed in the open grounds, after the man ner suggested.
