Tee rear Varieties. Thore are four different varietlcs of sal men found in the Columbia river. The first makes its appoarance in March, and is known aB the " stcel head" (Sahne aardnerii). In weight they average from twelve te twenty pounds caeb, and their flesh, whieh is a pale pink, has an insipid flavor and Is net esteemed geed eating by tbe Orcgenians. The next variety Is the " Chinook" (On (On cerhyncut quinna) In shape and size it differs from the " steel head," being a much broader fish, chunky and of larger slza ; lu weight runs from fifteen te fifty pound each ; in color its flesh is a very deep red. Its flavor is equal te the Ken Ken nebeck salmon, and this Is the fish that is used by the canner. The third variety is the " blue blaeic " salmon, which has net as yet been class! fled by scientists. It Is very mueh smaller than tbe two just named, weighing only from thrce te five pounds each. Tbe "blue black" is a symmetrical fish. Its flesh is deep red in color aud equal in flavor te the " Chinook."
