Hew could there be? We knew that the principal nutriment parts of beef, besides its 75 per cent, of water, are altmatea and fat. New albumen coagulates at 170 degrees Faren heit, and at 212, the boiling point, it be comes like eggs hard boiled, As a conse cense conse quenee,the albumen contained in the meat becomes entangled in the meshes and is held there. Of oeurso, then, the albumen does net find its way into the beef tea. As for the fat, the only remaining strength ening ingredient, that comes te the top and is always carefully skimmed off,, for nothing is mere disgusting te a sensitive appetite than greasy beef tea. And yet you Will say mat wen mauu eeei tea is very palatable and seems te de geed in many cases of weak and disordered stom achs, stimulating and nourishing. "Se it is and se it does. And yet beef tea is net nourishing. It is stimulating, however, and when we are sick and have no appetite we knew that if we can get the stomach te retain a eup of beef tea it will net be long before the organ will call for something that is really substantial and nourishing. It has the same stimulating effect as a glass of brandy or whisky, without entailing the depressing after effect which alcohol produces. The ingre dient that gives te beef tea its strong, agreeable flaver'is a fluid that is dissolved out of the white fibrous tissues of the meat, and which, as I said before, is no mere nourishing than se much lemon juice. An experiment was made en three dogs, all as nearly alike as te age and size as we could get them. The dogs were all shut up in separate pens, side by side. Fer the first deg was ordered a diet of Leibig's extract of beef and all the water he wanted te drink. Dec Ne. 2 was re stricted te water only, being allowed noth ing whatever te eat, while the third animal was allowed neither feed of any kind te eat nor water. Of course the deg that had no water wa3 the first te die ; but if you should guess which was the, nett te suoeumb you would probably make a mistake. It was net the deg that wan allowed nothing te eat, but the one at the ether end of the row, who died with a quantity of the meat extract within six inches of his nese. Neg Ne. 3, with noth ing in his kenuel but water, get along well enough for about a month and then died suddenly. We expected him te re main about six weekB, but I think the death of the ether dogs had a distressing effect en him. New, it is just as certain that the deg which died witb the Lcibig's extract under his nose was starved te death as it is that deg Ne. 2 died from the same effect. flew Much Will Oe It.
