in the orthodox and old-time way, variety
may bo given to tho Christmas turkey by
making the dressing after these directions
which no cook can read without applaud
ing : For a turkey weighing from eight to
ten pjumis, allow one loaf of Male bakei's

Crumble tho bread till very fine, season with
pepper and rait. Dram the oyster?, set
iug the liquor aside. Jf ow take a very shaip
kmfe and peel off tho outer rind of the
lemon, being careful not to have any of the
bitter and tough white skin left oa ; cut
the peel in very email bits ; chop tho
white part of tho ealcry very fine, adding
the butter and tho juice of the lemon ;
mix. tho ingredients mentioned, stirring
uutil thoroughly mixed ; then proceed to
stuff body and crop.

ba basted frequently ; the liquor of the
osters should bo put in tho pan when tho
pan is first set iu the oven, and this is to
ba used iu basting, Tho giblets and
ami liver should ba choppod very lino

stove, aud then when tho gravy is made
add them to it.
