Snipe on Toast, Chicken Salad. Cliecse. Water Cwckers. Fruit Pudding. Vanilla Ice Cream. Fruit. Coflce. Chicken Soup. One old fowl, cut in quarters ; four quarts of cold water, one onion, stuck with cloves ; one tablespoon ful of salt, half a teaspoonful of pepper. Put over the fowl, and skim carefully when the water begins to boil. - Simmer slowly for two hours, or till tender ; then take out tho fowl and set aside to cool. Strain the broth and return it to the fire: add oneteacupful of rice, which has been soaked two hours in a little cold water ; boil half an hour, then add eno tablespoon ful of finely-cut parsley and two beaten eggs stirred into a cup of hot milk. Let it barely come to boiling point again, and servo at once. Baked Bluefish. Lay the fish in a baking pan, having first scored it down the back, and pour over it a half pint of boiling water in which two tablespoonfuis of-but-terhavobocn melted. Bake one hour, bast ing often. Slide to fish platter and serve very hot. Sauce Hollandaise. Vnt in a saucepan a piece of butter tho size of an egg, and as it melts add one tablcspoonful of Hour. Btir till smooth,, and then add slowly half a pint of boiling water or of veal stock. As it boils stir in the yolks of four eggs. Add tiie juice of half a lemon and a tea spoonful of fresh butter. Serve at once. Veal Rissoles. Chop cold roast veal very fine, allowing one cupful for rissoles. Put into a saucepan ono tablespoonful of butter, and as it boils add a small onion, minced very fine. Fry two minutes, and stir in two tablespoonfuis of flour. Stir till smooth, and add ono cup of stock. As it boils stir in tho minced veal, half a tea spoonful of salt and a saltspoonful of pepper, with the juico of half a lemon. Take either puff paste or good piecrust ; roll quarter of an inch thick : cut with a biscuit-cutter ; put a teaspoonful of the prepared veal on each ; wet tho edges with cold water and press together. Fry in boiling lard : drain on brown paper and serve hot on a napkin. Saddle of Mutton. Tins should have been kept not less than a week in the ice house, or, if in winter, in a cold place. Allow twolvo minutes to tho pound in roasting, and treat as in directions for roast lamb in No. 1G of Our Continent. Potatoes. As in No. 1 of Our Continent. Boiled Onions. Boil fifteen minutes in one water, drain and add fresh, salting it and boiling then till tender about ouc hour if young : ono and a half if old. Drain ; add a tablespoonfull of butter ; put on in little bits and a sprinkle of pep per and serve very hot. JSggplant Stuffed. Parboil fifteen min utes. Then make a triangular cut in the top ; removo the piece and take out the seeds. Let it lie for an hour in water to which a tablcspoonful of salt has been added. Make a stuffiug of ono cup of crumbs, two ounces of salt pork and an onion chopped fine ; one teaspoonful of salt ; half an ono of pepper and of nut meg mixed; wet with half a cup of boil ing water or stock, and fill tho eggplant, tying a string around it to keep the piece in place, uake au hour, basting oiten with a spoonful of butter in a cup of water. Snijc on Toast. Dress and wipe them clean. Tho legs should be tied close to tho body and the beaks undor4.be wing. Lie very thin slice of bacon around tho breast of each bird and fry in boiling lard. Three minutes will bo sufficient. Serve on thin slices of buttered toast, salting and peppering them lightly. Chiclcen Salad. Cut the meat of the chicken used for soup into small bits ; pile in tho centra of a dish, arranging delicate lettuce about it, and mask with a Mayonnaise dressing, made as in No. 3 of Our Continent. Fruit Pudding Three pints of milk, eight Boston crackers split and buttered, six eggs beaten light, two cups of sugary ono teaspoonful of sail, quarter ot a nut meggiated, half a teaspoonful of cinna mon, one pound of stoned raisins, quarter of a pound of currants. Boil the milk and then add f-ugar, eggs and flavoring. But ter a deep pudding dish, put in a layer of crackers and moisten with a little of tho custard. Then add a layer of fruit and do this till all is in tho dish. Pour over the rest of tho custard and bako in a slow oven. Brown at tlio last and cat hot with or without sauce. Vanilla Ice Cream. Ono quart of rich milk, one quart of sweet cream, four cups of sugar, eight eggs, half a teaspoonful of salt, four tcaspoonfuls of vanilla. Boil tho milk, beat eggs and sugar together and add slowly until it barely begins to thicken. Whi'n cold add tho cream aud set on the ice.
