1 Tliis is the reason when the geed man
wants something toothsome for his after
dinner desert, and, in the absence of sum
mer freshness and the scarcity of fruit.the
housewife is often put te her wits' ends te
think of a proper .dessert. Maybe these
iiiut.- from a domestic contributor te the
Country Gentleman will help her :
r.uled Apple Dumplings. Make a poed
cruM. as ler biscuit or bhertcake. Pare
.some small-sized tart apples, halve them
and take out the cores. Put the halves to
gether and wrap around each apple a piece
of crust. Cever the bottom of the drip-piii"-pan
with these, then pour around
them a sauce made of het water, a piece
of butter the size of a small cyg, with
Mijjar, cinnamon and nutmeg. The pau
should be about one-fourth full. Bake
about half au huur, or until the apples arc
tender.
Apple Bread Padding. Cut some slices
of bread thin ; toast and butter them.
Cever the bottom of the pudding-dish
with some of these ; slice, in thick pteses,
ntum apples evor them, sprinkle en some
Miar, and se fill the dish with alternate
Liters of biead and apples. Mix gcther
one pint of milk, one egg, a little alt and
nutmeg, and pour ever the biead and
apple-. Steam or bake for half au hour.

1'litm Pudding. Mix one cupful of suet,
chopped Hue, one cupful of molasses, one
cupful of sour milk, one cupful of raisins,
one eupiul el curr.iiitu, halt n teaspoonful
of salt, and one teaspoonful of soda. Steam
hi oe hours.
Suet Padding. Three cupfuls of bread
numbs, one cupful of flour, one cupful of
chopped raisins, one cupful of suet,
whopped, one cupful of sweet milk, and
two lumping tcispoeufuls of baking pow
der. Steam iu a pudding dish from two
te thiee hours.
Cem Mail Padding. Take .'.even heap
ing spoonfuls of meal, half a teaspoonful
el salt, two tablcspoeufuls of butter, ene
tcafiipful of -tigar, or half sugar and half
molasses, two tcaspoeufuls of ginger or
cinnamon, and put into this one quart of
boiling milk. When cool, beat three eges
and add. Put into a buttered dish and
bake slowly two heur.1..
Fritter.', One pint of sum milk, eiieegg,
a little salt, one teaspoonful of nalcratus,
.uid Jleur sufficient te make a batter thick
enough te drop from a spoon without run
ning. Fiy iu het lard, a small spoonful
for each one. Silt pewdcied sugar ever
them while waim.
firmed Apple Pie. Wash the apples and
soak ever night ; then stew till .soft, mash'
and sweeten web. Flaver with nutmeg,
iiinomen or lemon as preferred. Place
between two crusts and bake. Dried
peaches are nice prepaied in this ..amc way
leaving out the seasoning.
Cranberry Pie. Stew the berries till
done, then put through a sieve. Add
plenty of sugar about one piuttecveiy
iiait of the sauce. Put into a plate lined
with rich pastry, and lay stiipi of pastry
ever the top.
Cream Pie. Tlnec eggs, one quaitef
milk, tin co tablcspoeufuls dour, one cup
ful of .suar. Beat the yelks of eggs and
mix with the dour, and pour with the
sugar into the boiling milk. Cever your
pie plates with pastiy and bake, then pour
the mixture in. Frest with the whites of
the eggs beaten stiff, slightly sweetened
and flavored. lijtuiu te the even and
brown slightly.
Lemen Pic. Grate the yellow paitef
tiie liud of one lemeu, squeeze out the
juice ; dissolve in cold water one table
spoon fu I of corn starch and add te the
lemon, then the yelks of three eggs, well
beaten, one cupful of sugar, and lastly one
cupful of boiling water. Cook this slowly
till it thickens. Line pie plates with a
tich crust, and wheu a little cool pour in
the above mixtuie. Beat the whites te a
stiff froth, add oue teaspoonful of sugar,
spicad ever the top of the pie and brown
slightly in the even.

principals te which was none ether than a
pi ist.n inspector. It appears that at the
last meeting of the beard of inspectors a
i evolution was passed instructing one of its
ineinbe! s (a gentleman who lives net very
far from Christiana) te purchase for priseu
use six shoats, the price net te exceed five
delkiis each. The shoats arrived aud with
them the bill, which latter showed that
they had been bought for seven dollars
each. The gentleman who had made the
purchase explained this apparent discrep
ancy by dwelling en the alleged fact that
shoats at this season of the year are very
scarce.
And new comes the strangest part of
the story. Christian Kauffman, a farmer
and piemiacnt member of the Amish
church at the Gap, bought from the same
inspector, at the very tinie the latter was
-uppes;d te be negotiating for the pur
chase of shoats, six of the ten shoats be bo be
lenging te the inspector at the astenishiug
figure of fourt'ellars each. The four re
maining shoats, recruited by two ethers
which must have cost him less
than four dollars each (else he
would net have sold at that figure
te Kauffman) he disposed of tothe comity
at the rate of seven dollars apiece. Here
it will be observed the stern guardian of
priseu discipline made au aggregate profit
en the shoats of upwards of eighteen dol
lars, twelve of which lie made at the ex
pense of the county. In view of facts like
this if. might be well te suggest te the
prison keeper that reform, like charity,
should begin at home, and if the sugges
tion may be pardoned it might be advisable
te make " shoats " ineligible as priseu in

While Mr. J. A. Meyers, druggist, was

him down, the barrel falling en top of him.
He was considerably bruised about the
body and one side of his face was skinned.
Chief Burgess Sneath should put a step
te snow-balling, as it lias proved te be a
very dangerous amusement. Persons
walking along the streets are hit in the
face, ami in diiviug the horses arc h't and
scaled, sometimes causing a run off.
The I'pp & Black contract has been
finished at last. The grading extends from
the east yaid te a point midway between
Columbia and Meuntvillc. It is expected
that the P. It. It. cempauywill begin bal
lasting the new portions as seen as the
wcainer permits. ine extension was
made te accommodate the immense num
ber of tiains that aie made up in that
yard.
In entering his stable yard in his

but received no Injury. The ice had col
lected in the gutters and in crossing it one

"Muldoeu's Picnic" played te a $515
home last;eveniug, the largest amount
taken in for ever live years. It was under
the management of the Citizens' band.
Feuitecn hundred persons assembled in the
opera house te witness the much-talkcd-ef
"Picnic," and fourteen hundred peisens
left the opera house disgusted with the
same picnic. The opening pait, consisting
of a specialty pei formance, was the worst
Columbians ever had te endure. It was
hoped that " Muldoon's Picnic '
would redeem the ether perform
ance, but, alas, hopes were like the chaff
befeie the wind. The "Picnic" was even
worse than the specialties, if such a thing
weic possible. They play in Lancaster this
evening, and if people aie anxious te see
a peer play we advise them te go and see
" Muldoon's Picnic." The band leel very
badly ever the performance, se much se
that their engagement with Hyde & Beh
man for " Muldoon's Blunders," Feb. 28,
has been canceled.

Three Lives Loii Near Uuntlogdeu TbN
Morning.
Harrisbure, Pa., Feb. 9. A terrible
accident occurred en the Pennsylvania
railroad, near Huntingdon, early this
morning, resulting in the death of two
men, namely Engineer David Coulter and
Conductor Stenebreaker, and the fatal in
jury of a fireman named Kennedy.
The particulars of the accident are very
singular. A heavy freight train was
going East and another was going
West, en separate tracks, of course.
but as they approached each ether
an axle breke en ene of the cars. This
car careened ever upon the adjeiniug
track and directly iu front of
the ether train. The shock was se
sudden and complete that the engiucer
and fireman had no time te jump. They,
together with the conductor, were carried
with the wreck, which jumped the track
and rolled down au embankment
into the water. Coulter and Stono Steno Stone
breaker were almost instantly killed.
All the victims belong te Alteena.
1 he wreck blocked the tracks for sev sev
eral hours aud the mails were greatly delayed.
Anether Accident at the Same Place.
HARnisnuRe, Feb. 9. Owing le theac
cideut at Huntingdon the !!:50 a in. train
did net arrive here until 2 p. m., when
another accident at the same place
and en the same read was reported. It
seems from the report that after the first
wreck the engine of another train crashed
into the rear end of one of the disabled
trains. The less te relliug stock is said
te be very heavy.

Liverpool, Feb. 9. Ad vices have been
rcceivqd here that the natives have
burned the town of Feuricarial, en the
west coast ei" Africa, aud plundered the
British and French factories. Several of
the owners aud clerks are missing and it
is feared that they have been killed.

Washington, Feb. 9. The national
beard of health te-day received reports
showing that during the week edning Feb.
4 th last there were 74 cases of smallpox
and 14 deaths iu Pittsburgh, Pa., 3 deaths
in the District of Columbia, 5 cases in
Omaha, Xeb., and one case near Milan,
Tenn.

sy, aged 14, died at the residence of his
parents, in West Philadelphia, last even
ing from hydrophobia. One day about a
month age he remained at the store where
he was employed, te feed a geed sized coach
deg. The animal snatched the meat offered
him,but in doing se caught euc of the boy's
fingers with his teeth. Tlie wound
was promptly cauterized and the deg
killed. The lad's wound healed up, but a
few days age he was taken sick. His ill
ness became violent yesterday morning.
Rapid convulsions continued during the
day aud death ended his sufferings last
night.

Formerly no ene thought of pruning his
out-deer grapes before February, but Jat
terly'thc fall or early winter is preferred
by most people. In our own opinion we
de net think that it makes any diflerence
what time it is done, se that it
is before the sap starts in the spring ;
hence February wc would say in the first
half of the mouth is probably as geed as
any oilier time, and our own vines arc
mostly attended te in that mouth, and we
have been about as successful iu raising
out-deer grapes as a majority of growers.
The pruned vines sheuM be allowed
te lay ilat upon the ground, as it is
warmer there than en the frellis, aud
they should remain there until the buds
have started in the spring, which will have
the effect of causing buds te strike low,
and thus provide new leaders te take the
place of old ones. Rampaut growing viues
should be cut back mero severely than
slew growers, and none should be trellised
higher than about six feet from the ground.
Lateral branches the fruit bearers for the
year should be cut back te two or three
buds. The soil iu which grapes are grown
should be kept iu the best condition
ground bones being probably the best fer
tilizer and should be stirred several
time", during the growing season.

Washington, Feb. 9 . In the Senate te
day Mr. Pendleton piesented a petition,
signed by judges of the supreme court of
Pennsylvania aud of the common pleas
courts of Philadelphia and neighboring
counties, by the mayor and heads of de
partments of the city of Philadelphia, and
by 2,500 leading men. of all classes and
professions in the cities of Philadelphia
and Pittsburgh, asking that appointments
te suberdiualc executive officers, with such
exceptions as may be deemed expedient,
shall be made by competitive examination
and that removal shall net be made u;i
partisan grounds.

Davenport, la., Feb. 9. J. F. Schuuir,
a teacher of dancing iu this city, was shot
and killed by two highwaymen, while
riding in his buggy three miles south of
this city, last night. There is no clue te

fault. Theiu is much mero art in sewinn
Feeds successfully than pcople suppose,
and yet it is vciy simple when understood.
Many seeds arej sewn tee deep, aud yet
if net deep enough they will dry up and
net grew at all. The depth must be de
termined by the size of the seed and the
character el the soil. If the soil ha light
aud candy, there is net se much danger of
the seeds rettiug from deep sewing as if
the soil by still", and even in stiff the depth
will have te be determined by the con
dition of the soil. Suppese we are te sew
a picce of eats, in. land that is liable te be
come cletty, aud this is the distinction
between light aud heavy laud. If we can
roll the land after sewing it would net
matter much about sewing deep ; but the
seed would have te be harrowed in pretty
well if left in a cletty condition unrolled.
Indeed, if ihn seed were sewn ou
ground simply first harrowed aud then
rolled, iu such land as we have described,
j many mere seeds would de well than if
uuriewcu ueiore roiling, in etucr werus,
shallow sewing, if the ground is well pul
verized and pressed firm, is mero favor
able than deep plautiug with a rough sur
face. Finely pulverized soil, with a well
pressed surface, is indeed the very host
condition for success with all seeds ; aud
the shallowest kind of sewing, se that
the seeds be firmly imbedded iu the soil,
is the essencc of geed seec! sewing.

der leaflets. She had toyed with the notes
of the middle register ; playing with thorn
without seemingly any effort, and had

stocking, rosebuds und all, until it hung
about her shapely instep a limp and sub
dued mass, displaying an ankle of ala
baster whiteness. It did net take long
for Patti te appreciate what had happened
aud without the least exhibition of any

curred, she quietly walked te the side
scenes, when presto ! she leappearcd, and
the stocking was in place again, and the
rosebuds wove once mere shining out.
