CHRISTMAS BAKING.
GUe RECEIPTS rOR CAKKS.
Light Gingerbread.
Germantown Telegraph.
Tlirec cups of flour, one of sugar, one of
butter and one of molasses ; three eggs
beaten light, one tablespoonful of ginger,
one tea-spoonful of pearlash and some
cloves. Beat the butter in sugar as for
pound cake, then add ether ingredients,
putting in the pearlash last. Bake them
in cake tins.
COCOANUT CAKE.
Take the whites of eight eggs beaten te
a stiff fieth, euc-Lalf cup of butter stirred
te a cream, half cup sugar, half cup sweet
milk', two and a-half cups sifted flour,
tcaspoenful cream of tartar, half a tea
spoonful of soda. Make of this three flat
cakes, hake en pic tins and while warm
spread with icing, and grate en cocoanut
between each cake.
CHOCOLATE CAKE.
Take the yolks of ten eggs, and use just
the same quantity of everything as you
did for the cocoanut cake, grating choco
late upon the icing between each cake.
The whites of two eggs beaten till they
will net slide from the plate, and enough
pulverized white sugar te make it veiy
thick, will niak'! enough icing for one
cake.
rock CAKE.
The whites of four e;;gs beaten very
light, one pound of leaf sugar added te
them, Lh ice-fourths of a pound of sweet
almonds slightly bruised. Hake en paper
in tins.
GINGERBREAD.
Thice pounds of flour, one pound of
butter, half pound sugar, quart of mo
lasses, two ounces of ginger, ounce of cin
namon, ounce of allspice, an ounce and a
half of cloves. Wash before baking with
molasses and water.
ENGLISH RUNS.
One pound of flour, half pound of sugar,
quarter pound butter, same of cinnamon,
half pint of raisins ; rub them all together
and mix with milk and four or live drops
of pearlash. Wash them after thev are
baked with sugar and water.
ALMOND CAKE.
One pound of sugar, half pound of flour,
ten eggs, ounce of bitter almonds, a glass
of kase water; beat the yolks till they are
quite a batter, then add the sugar and
beat it well : having previously pounded
the almonds line in the kase water, add
them te the yolks; the whites must he
beaten vei v light and then add the flour
just stiiicd into the ether itigicilient.s,
Bake an hour and ten minutes in rather a
quick even.
MILK niSd'IT.
One quail of milk, pound of butter,
enough ll.mr te thicken it, and a small
teacupfttl of yeast ; set them te li.-c early
m the mei mug.

Six cup-s of flour, two of sugar, two of
butter, two of molasses, two of milk, four
eggs, :i tablespoonful ei ginger anil a little
allspice; beat the butter, sugar and eggs
light, then stir 1:1 the ether ingredients.
Add a teaspoon fill of pearlash dissolved in
vinegar.
