The Cooks' Ball ana Exhibition.
New Yerk Sun.
Next Tuesday evcuing the annuual ball
of the Ficuch cooks will take place at the
Academy or Music, New Yeik. These
cooks are organized into a benevolent
society, and this ball, which will be the
fifteenth jjiven by them, is for the benefit
of the widows" and orphans" fund of that
organization.
But though balls may be given for phil
anthropic jiuipc-es, they must appeal te
hev.ething besides people's charitable im
pulses te draw together great and brilliant
limnr: Tl'l this Wlts' liall fleCS efier-
extraeidinary attractions. The Charity
ball may be fashionable and elegant. The
late ball of the Cerclc de ''Harmonic was
full of exhilaration, and provocative of
gayety of a carnival sort. The military
balls offered the young men of the Nation
al Guaids a chance te sport their uniforms
before the fair hex. But the cooks" ball
has a feature peculiar te it, and one of
surpassing iuteitst.
Theic aie in the Seciete Culinaire Plii Plii

teen honorary members. The most famous
of the Frencli cook-, of New Yeik, some
of them gastionemic artists with a L'uro L'ure
pean as well as an Ameiicau leputatien,
are em oiled in this membership. Fer the
purposes of their annual ball the-c mas
ters of cookery enter into a fiiendly com
petition te produce the most pel feet gas
tronomic and lesthetiu eiiects which their
noble art is capable of conceiving.
The supper at the French cook-.' ball is,
therefore, its grand and unique feature.
The bill of faie for next Tuesday evening
comprises, for instance, about ninety dif
ferent dishes, many of which aie of the
most elabeiate and highly ornamental
character, while each of them is the mas
terpiece of it-, author. On the table in
Irving hall, which will be connected with
the Academy of Music ferthe convenience
nf the ball.' will be di-.nl.iycd the most
brilliant achievements of which metropoli
tan cookery is capable. Each aitist pre
pares hisd'ish knowing that it will come
under the criticism of expcits in practical
gastronomy, and is acceidingly stimulated
te de his best.

used te be a big boulder which furnished
