B. in Country Gentleman. In many places fowls are fattened by ar tificial methods. The fowls are confined in close, dark places, with barely standing room, and are literally stuffed alive. Can such flesh be wholesome as feed? Is the practice humane? I will own that the barnyard fowl is a filthy scavenger natur ally. Still, in my opinion, there is no sweeter, tenderer fowl's flesh than that which is gained while running abroad. Nevertheless, the mere healthy the ani mals are kept while fattening, the mere wholesome flesh de they return, and this cannot be done in close confinement. We Americans are imprudent in our habits, and in no one are we mere se than in matters pertaining te our feed. The fat of fowls is like oil and never digests, or is taken up with vegetable feed, and the worst of this fat or grease is produced in the fowls confined and stuffed. Geed solid meat can only be produced when the fowls are in a natural state of health and liberty. When.fewls are prepared for market, the ebjecl'appears te be te obtain the greatest weight at the lease cxpcuuiture 01 ioeu. Hence the practice of confinement. Fowls thus kept in confinement must be fattened quickly in ten days, or fourteen, at least. They cannot survie the pressure longer. But the public appetite demaudsfat fewln, and this demand must be gratified. When the public learns te distinguish be tween the naturally and unnaturally fed poultry, this cruelty will cease. It takes longer te fat fowls for market in the na tural way. First, the growth and feather ing must be obtained, after which the body fills out plump. This cannot be obtained in perfection until the bird has get its natural growth, which period varies with the breed. The males are longer in arriving at maturity than the females. The frame is larger, the muscle greater, and greater vigor is required; consequently males never take en as much fat as flesh, neither is it of that sweet, juicy quality se mani fest in the female, unless the cock be capo cape nized, in which case the flesh is superior. When the fowl has obtained its full growth, it is an easy matter te fatten it. Give plenty of geed sweet grain, full liber ty and access te water, and they will fatten themselves. After the fowls arc fattened, it is quite a nice point te dress the fowls and prepare them for market, when net sent in alive. If dry picked, there is little danger of marring the flesh in pick ing ; but when scalded, much care has te be taken in handling that the outer skin is net broken, or ruffled, in the least. The legs, which are the most difficult te man age, should be picked dry, and net touched while warm or wet. The feathers from the under side of the wings may be rubbed off, net picked. Arousing its Kcailers. An alarm or lire sit midnight is a startling thing, but net half m startling te many who hear it as would lie the biidtlcu knowledge et their own dangerous physical condition.
