Advice by the Ocrmantewn Telegraph. At a late meeting of fruitgrewers in the western part of the state of New Yerk, a member said he had tried many ways te ripen pears, but had found the best way te be te pack them in close boxes aud keep them in a cool though net tee dry an at mosphere ; but did net say where this place exactly was. Pears se ripened, he averred, come out with better flavor and color than if exposed te the atmosphere te ripen ; but did net say that these boxes were air tight. Anether person stated that he had known peats buried "right in the soil out of doers te coma out in perfect condition in tlic spring." Is this really se? We can't believe it. Wc have tried it several times, and seen it tried we think a score of times, and in every instance it was net sim ply a failure, but ruined all the fruit. These thathad net retted outright were worthless, as all their flavor had departed, and an earthy taste if it could be called a taste at all was all that was left. Iudccd, no fruit raiser, who has tried this plan once, will care te try it again. Beth pears aud apples will keep" best in the cool, dry cellar or latticed shelves, and in single layers. If thev are net '.e lipcn the cooler the cellar the' better; and if it should be tee moist fresh lime under the row of shelves will 1)0 of great benefit. Try it and report. Even packed in dry barrels and kept un der a shed, protected against rain or moisture, te remain there until late in November and freezing weather ap proaches, then removed te a cold, dry cel lar and the barrels headed up, is geed as any way, where the quantity en hand is large, and the purpose is te keep them ever winter for spring sales. In fact, we have known apples put up in this way that have been preserved sound and geed into June ! Sating .Sweet Potatoes. The farmers of this state, and especially in this section, find great difficulty in sav ing the few sweet potatoes they raise for their own consumption, as when also they wish te put up enough for winter of ether people's raising. AVc have seen a number of methods recommended and have some experience ourselves. The following leeks as though it might answer very well, and is adopted by an experienced Jersey grow er : The potatoes are dug after the first sharp frost, and left te lay as dug until near evening, when they are covered with the vines. In the morning the vines are removed and the sun gees en with the drying process. This is pursued for four or five days when they become thoroughly dry. They are then carefully carried into the cellar, where they are put en shelves in single layers, standing en their ends, by which any rotten ones can be easily seen and removed, and the air has free circula tion. Warmth has a great deal te de with preserving the sweet potato, hence, if the cellar is net naturally warm, they should be put into a cellar in which there is a heater. They bear considerable heat with out sprouting, but it should net get beyond fifty nor below forty degrees. We have also known them te be packed in boxes, each potato being wrapped up in paper, and the boxes placed in cellars where there is no danger of freezing, as this potato is very susceptible of being uip pid, and when once touched they decay immediately. Yet the temperature should net be tee warm te cause them te sprout. We have ourselves tried them packed in paper and put in barrels, also with fine shavings, and placed in a cellar well ven tilated, but they would net keep. We hac found residing wc may say at the headquarters of the sweet potato region that the sur est way te obtain geed, sound potatoes was te buy them in the market from Jer sey farmers just as wc needed them say a peck or half bushel at a time. But this system can be adopted only where the con veniences are at hand.
