Tomato cv, v ..—The following reci

nitliod by the proprietor of one of our
principal restaurants, who liastlseiep
u tat ion of keeping the best article ol
the kind in the city: To half a bush
el skinned tomatoes add one quart ot
good vinegar, one pound of salt, quar
ter pound ot ground black pepper,
ounce and a half of best cayenne pep
per, three quarters of a pound of mus
lard, one quarter of a pound of all
spice whole, one ounce of cloves whole,
twenty (Moves garlic cut line, six good
onions cut tine, two pounds brown su
gar, one handful green peach leaves
Boil for three hours, constantly sto
ring to keep from burning. When
cool strain through a tine seive in a
coarse cloth, and bottle for future use

Apple Cakes. —Flour one pound, su
g ir halt a pound, two eggs, a little salt
and one yeast powder. Grate six
large apples, and rub them well into
the other ingredients; add milk sutfi
eient to make a dough, set into thin
cakes, and bake quickly.
Apple Pudding. —Pare four or five
large tart apples, grate them fine; then
make the following custard, into which
stir the grated apples: Flour four ta
blespoonsful, one pint of milk, five
eggs, and a little grated orange peel.
After you have these ingredients well
mixed, pour them into your pudding
dish, and bake about an hour and a
quarter
