IFLJEOIJEPIES, From Ciodey's Lady's Hook for February. Sour Cream Biscuit. Silt a teaspoun ful of salt and one of soda with a quart of flour in the bread pan ; have ready a large pint of sour cream, beat one egg, add it to the cream, mix, roll, cut,and bake the biscuit as quickly as possible. Swiss Puil'Untj. —Take a pint each of fine bread-crumbs and minced apples, put them in alternate layers into a well-buttered pie-dish, with a sprink ling of chopped blanched almonds, cur rants, and sugar between each layer. When you have placed in all the in gredients, pour in six ounces of fresh butter previously tnel ed, dust over the top with more bread-crumbs, and bake it for hall an hour. Ginjcrsnnpi—Ont- quarter of a pound of butter, and the same of lard, mix ed in a quartet* of a pound uf brown sugar, a pint of West India molasses, ginger according to its strength, and O . cinnamon according to taste ; ad . one quart of flour, t vo U aspoonluls of soda, dissolved in a wineglass of milk and flour, to enable you to roll it thin. — Bake in a moderate oven. Carolina Cuke. Two coffee-cups of pulverized sugar, one of cream, two tablespoonfulsofbutter,and the whites of eight eggs; beat stiff; if the cream i is sour, use one teaspoonful of soda; add two coffee-cups of flour, mix quick j ly, and bake as soon as mixed; flavor to suit the taste. Put together like white cake. Glayer Biscuits. —Rub half a pound of fresh butter into two pounds ot tine flour, add halt a pound of sifted sugar, and three ounces of pounded ginger.— ; Beat up liie yelks of three eggs, and take a little milk, with which make the above ingredients into a paste. I Knead it all well together, and roll it out extremely thin, and cut it into the form of round biscuits with a paste cutter. Bake them in a slow oven until crisp, taking care that they are a pale brown color. Short Cake.— One pound ot flour, one pound of butter, half a pound of sugar, and a teaspoonf ul of caraway sends Spread on a tin sheet with an edge, and bake slow. Sprinkle a little sugar over the top when it is taken iiom the oven. Scotch Cake. One pound of flour, one pound ot sugar, half a pound of butter, three eggs, well mixed er, a little dried and pounded orange peel, and cinnamon. Roll on a tin sheet with an edge, and bake. Lemon Cream. —To one quart of new j milk add the white- often eggs; beat to a stifi' froth, and to each egg add a tablespoonful of white sugar; beat well j together, and add to the milk while boiling. Boil a few minutes, take it off, stir until it cools, and flavor with lemon. Make in a tin vessel. Blanc J lani/e. — Four or five table spoonfuls of corn starch, to a quart of milk; boat the starch thoroughly with two eggs, and add to the milk while boiling, with a little salt; boil a few minutes, stirring briskly ; flavor with rose, lemon, or vanilla, and pour into a mould.
