Victoria Bunt. —T wo ounces of pound
ed loaf-sugar, one egg, one and a half
ounce of ground rice, two ounces of
butter, one and a half ounce of cur
rants, a few thin slices of candied peel;
flour. Whisk the egg, stir in the su
gar, and beat these ingredients well
together; beat the butter to a cream,
stir in the ground rice, currants, and
candied peel, and f.s much dour as will
make it of such a consistency that it
may be rolled into seven or eight balls.
Put these on to a buttered tin, and
bake them from half to three quarters
of an hour. They should be put into
the oven immediately, or they will be
come heavy; and the oven should be
tolerably brisk.
Cocoanut Biscuit or Cakes. — fen oun
ces of sifted sugar, three eggs, six min
ces of grated cocoanut. Whisk the
eggs until they are very light; and the
sugar gradually; then stir in the eo
coanut. Poll a tablespoonful of the
paste at a time in your hands in the
form of a pyramid ; place the pyramids
on paper, put the paper on tins, and
bake tiie biscuits in rather a cool oven
until they ara just colored a light
brown.
Seed Bi<ruits. —One pounlof flour,
quarter of a pound of sifted sugar,
quarter of a pound of butter, half an
ounce of caraway seeds, three egg<.
Beat the butter to a cream , stir in the
flour, sugar, and caraway seeds; and
when these ingredients are v. e.l mix
ed, add the eggs, which should be well
whisked. K- ]i out the paste, with a
round cutter shape cut the- biscuits, and
bake them in a moderate oven from
ten to fifteen minutes. The tops of
the biscuits may bo brushed over with
a little milk or the white of an < gg.
and then a little sugar etrevvn over.
Savoy Cakes. —Four eggs, six ounces
of pounded sugar, the rind of one lem
on, six ounces of flour. Break the
• eggs into a basin, separating the whites
from the yelks; beat the yelks well,
mix with them the pounded* sugar and
grated lemon-rind, and beat these in
gredients together tar a quarter ot an
hour. Then dredge in the flour grad
ually, and when the whites of the egg
have been whisked to a solid froth,
stir them into the flour, etc., beat the
mixture well for another five minute-,
t len draw it along in strips upon thick
c irtridge paper to the. proper size of
the biscuit, and b;.k • them in rather a
hot oven ; but let them be careful!v
watched, a a they are soon clone, and a
few seconds over the proper time wili
scorch and spoil them. These biscuits,
or lacHes'-fingers, as they are called,
are used for ranking Charlotte in -o-.
and for a variety oi' fancy sweet d: •li
es.
Crullers —Half a pound of butter,
three-quarters ola pound of -ugar, >ix
eggs, two pounds ot flour, two table
spoonfuls of milk, a small lump of sale
ratus the size of a nutmeg; [lav: r with
nutmeg, mace, and a little salt.
Mountain CaJc. —One pound of su
gar, half a pound of butter, five eggs,
one cup of milk, a little nutmeg and
cinnamon, one pound of raisin.-, one
glass ot wine nearly full, one pound of
flour, one teaspoordul of soda, and two
teaspoonfuls ot cream of tai tar.
Molasses Cake, —Three cups of mollis
scs, one of butter, one of sour milk,
two eggs, one spoonful of saleratus.
